| I had made the vegan dish for the occasion, which someone... left in the oven too long and it ended up a little burnt. I was pretty upset until I tasted it and it turned out great!!! My sister and mother-in-law agreed. Anyway, it was Zucchini Lasagna made with cashew cheese. I used my sister's lasagna recipe but instead of noodles, I used zucchini that I baked before assembling. I plan on making this again for Easter (which we are having at our house!!). |

| This was my plate (sorry for the bad pic): green beans sprinkled with flaxseed (my mother-in-law said she sprinkles flax on everything!), roasted potatoes with rosemary, zucchini lasagna and salad. |

| After the Vegetarian Food Festival, I made some treats for the week: a Nettle infusion and Kristen's Raw Vegan Yogurt. |

| This was dinner one night: green beans, cabbage, and broccoli cooked in tomato sauce and covered with left over cashew cheese. I am loving this meal lately! |

| A green juice that Little A and I shared: cabbage, romaine, apple. I love adding cabbage to my juices, it's very healing for the gut. |

| Another dinner: Mache lettuce (LOVE), kimchi, capers, raw olives, avocado, hearts of palm and Bubbie Pickles. I also had two sweet potatoes with coconut oil. Mmmm! |

Looks great as always. I buy the pea shoots from TJ's too. I have been juicing them lately and they are great! Enjoy the city!
Your food looks so yum! It looks very cheesey and italian hehe. I'm def going to try your zucchini (corguette) lasagne :)
I can't wait for spring, too. The weather has been so beautiful this weekend that I don't want it to end.
Although they say you eat with your eyes first, looks can sometimes be deceiving. I bet your lasagna did taste good in the end. Don't judge a book by its cover. That's what I tell me kids when I want them to try something that may not be as pleasing to the eyes as it really is to the taste buds :-)
