Loving my Smoothies

Hey! Happy March! Rabbit, Rabbit! :))) I hope you all had a great week! Don't forget to get your entries in for my latest giveaway! ;) What are you up to this weekend? We are going to the Vegetarian Food Festival in NYC on Sunday! I'm excited!

This was dinner I made one night: Giambotta: cabbage, green beans, zucchini, and eggplant cooked in tomato sauce over raw arugula. This came out so good I am making it again this weekend!

I made Raw Carob Brownies from this recipe from The Spinach Spot.

They turned out SOOOOO GOOD! I added some dried figs as well. Little A and I couldn't stop eating them! I will definitely be making these again, very soon!

This was a smoothie I had one day: mixed berries, frozen broccoli (you can't taste it!), bananas, 2 scoops of Vanilla Warrior Blend, water, and of course, LOVE!

This was a raw wrap I had one night with a big salad: arugula, kimchi, Bubbies Pickles, mustard.

Another smoothie (I've been having one for breakfast and one for lunch daily): spinach, Matcha Powder, bananas, frozen peaches, 2 scoops of Vanilla Warrior Blend, maca, water.

Little A's newest crayons! We've been having trouble finding good natural crayons and these are great!

I made Nettle infusions this week, I've been using them instead of water in my smoothies for the extra nutrients. They are really easy to make and last a couple of days in the fridge.

This was a juice the Little A and I shared: romaine, celery, orange, and kale stems. I save the stems from the kale I use instead of throwing them away. They are packed with nutrients! UP CYCLE! ;)

Another smoothie for you: frozen pineapple, cilantro, frozen mango, banana, 2 scoops of Vanilla Warrior Blend, dried apricots, Nettle tea, and coconut oil.

And finally, Little A's dinner one night: Vegan pesto pasta (she got this at Dean's Market and had it left over) with Nutritional Yeast, sweet potato with coconut oil and a scoop of lentils with celery and carrots.

Ahhh, I have to get some of those crayons! My son keeps trying to chew on his. :/

ha, i say rabbit too! read it in a judy blume or beverly cleary book i think when i was a kid and never heard anyone else say it.=)

Wow! Everything seems very healthy! Are you able to maintain this kind of meal plan even if you don’t dine out? About the Giambotta, can you suggest any substitute for arugula? Its somewhat bitter for me. I know that vegetables that taste bitter are healthier, but maybe there's an alternative for that. Haha!

You can use any green! Spinach would be great!
