I hope you all had a lovely weekend. We had a little snow storm on Friday night, but luckily, it wasn't as bad as predicted. We still had fun playing in it, and in total we got about 14 inches. Ack!
|This was dinner one night: a mesclun salad topped with shiitake mushrooms that I sauteed in olive oil and coconut aminos; capers, raw kraut, raw olives and coconut vinegar.|
|Along side I made Yam fries that I dipped in my cashew sauce (cashews, mustard, coconut aminos, turmeric, Nutritional Yeast, water, all blended).|
|This was a snack Little A and I shared one day: Raw Sunflower Seed Bread (by Lydia's) with my cashew dip spread on top and raw kraut, Bubbies pickles and spinach.|
|I made these little protein bites for Little A and I to have: almonds, raisins, dried figs, goji berries, water and chlorella. I added all to the food processor, rolled in balls and refrigerated.|
|Now for some fun in the snow! T pulled Little A and I around.|
|Of course, I had to make a snow angel!|
And for some sledding fun! Sueshe going down the hill that T made. Before anyone gets worked up, my sister told me this was abuse, but we consider this to be part of Sueshe's bucket list. She's always wanted to go sledding! ;) There are a few other sledding videos (including an embarrassing one of me) on my YouTube page, if you are interested.
|We worked up an appetite playing in the snow, so we decided to get lunch at Whole Foods. I had a kale salad with artichoke hearts, potatoes, carrots, and peppers|
|For dinner, more of the same! Kale salad topped with my cashew sauce, kimchi, capers and purple potatoes that I cooked in the oven with vegetable broth.|
|And finally, I made some yummy kale chips this weekend with the rest of the cashew sauce (I got a LOT of use out of that stuff!). Yummers!|
