Celebrating 60!

Hey Sunshine's! I hope you are all having a great week! Last Saturday night, we celebrated my Dad's 60th Birthday! My Mom had a big bash for him with lots of vegan food for my sister and I (well, we supplied the vegan eats). Here I am with Baby A!
I started off with some raw veggies and hummus. I get really excited for hummus! Love the stuff! I actually brought a raw veggie platter and some hummus from Trader Joes.
This was my dinner plate: a big salad dressed in a dressing my brother made (olive oil, balsamic vinegar and mustard), quinoa salad that my Mom made (quinoa with avocado, red peppers, corn), and a BIG helping of  my sister's gluten free, vegan lasagna (made with cashew cheese). That lasagna is so damn good!!! I definitely suggest making it!
I also made a raw vegan banana cream pie! I basically processed a cup of macadamia nuts, a cup of cashews, about 1 tablespoon of coconut nectar and 1/4 cup of melted coconut oil, then pressed that into the bottom of a pan for the crust. For the filling, I blended about 4 bananas (add water to make it workable, but make sure it's still nice and thick), 2-3 tablespoons of coconut nectar (taste for sweetness), 1/4 cup of coconut flakes, a pinch of sea salt, 1/4 cup of cashews and some alcohol free vanilla extract. I added that on top of the crust, sliced some bananas and sprinkled some coconut flakes on top. Then I froze it for a few hours and let it thaw for about 30 minutes before serving. This came out perfect! Even some non-vegans enjoyed it!

Nommy, Nom, Nom!

Hey All! I hope you had a great weekend! We celebrated my Dad's 60th Birthday on Saturday night (more from that in my next post). Anyway, before the weekend even began, Baby A and I did some shopping at Trader Joes. It was around lunch time and I was pretty hungry. I spotted a falafel platter that looked delicious and was gluten free (well, the falafel, hummus and tahini were. I didn't eat the tabouli or pita bread). I put the falafel on top of a bed of arugula with avocado, tahini and hummus. YUMMY!
For dinner one night, I made my Lemon Lentil Soup. This time I added green beans, peas and spinach. So delicious!
I picked up a few organic grapefruits at Trader Joes as well. Grapefruit is definitely one of my favorite fruits!
Another salad I had one day: arugula, avocado, hummus, a Sunshine Burger and some Bubbies Fermented Relish (didn't even know this stuff existed! SO GOOD!!!).
On a relish kick, I added some to a bowl of brown rice with broccoli, peas and avocado. A simple, tasty dinner.
I had lunch at Whole Foods over the weekend. This was a kale salad with pea sprouts, brussel sprout salad (raw),  and some chickpeas.

Eating Eats

Hey Beauties! I hope you all had a great week! Thanks for all the support in my last post. I know a lot of people want to help and are doing it out of kindness, but that isn't what I was talking about. I am talking about emails from people who have never commented saying "YOU CAN'T EAT THAT, WHAT'S WRONG WITH YOU!" Yea, friendly people out there. :) I know my readers who give me suggestions are only doing it out of love and aren't criticising and judging me. 

Anyway, the green juice has been flowing freeing around here. This was romaine, parsley, apple and lemon.

One night for dinner I made this lentil loaf (used GF bread crumbs and modified a few things) and an artichoke steamed with garlic and olive oil.
Here is another picture of the loaf. I would make this again but using sweet potatoes! That would be really good!
I finally tried some chocolate covered kale chips! Oh my word! What a great combo. Both of my favorite foods, how did I not think of this when I was pregnant? ;)
I made this simple dinner one night: broccoli, garlic and white beans over quinoa.
Speaking of simple meals, this was a lunch I had one day: avocado, raw kraut and Bubbies pickles sprinkled with dulse flakes.
The lovely Callie was kind enough to send me a little "Belated Birthday/Get Well" batch of her Rawxies! She is the sweetest! And her product.. AWESOME!
The pups wanted to make an appearance.. Here is SUESHE!
And of course, the infamous, GINGER!

Rawr!!!

Hey Beautiful People! I hope you are all having a great week! I am so happy to be feeling better and I am loading my body with delicious, healthy, quality food! I just want to make a quick mention of something, a lot of people like to tell me "eat this, don't eat that.." etc. Well, this tends to annoy me. Not everyone is the same. Heck, I know some people with Crohn's who do fine on a heavy protein, meat filled diet and others who can't digest a vegetable. We are all different, and if I cut out everything people told me I shouldn't eat, I would be eating water and dirt, LOL! I just wanted to get that off my chest, I am eating what I can and what makes me feel good. Just because a food makes you feel sick, doesn't been it makes me feel sick. :)

Anyway, over the weekend, we visited our family. First stop, DEANS! I grabbed a 24 oz "Sweet Greens": apple, kale and spinach and shared it with Baby A.
I also had a collard wrap for lunch (filled with veggies, sprouts and raw cashew mayo).
I decided to give Harmless Harvest coconut water another try and found I actually liked it this time. Maybe the last one I had went bad, since it was sour to me.
I was also delighted to see Dean's had raw falafel by Live Jolly Foods. I just love everything that company makes!!! These were so good, I saved a few to add to a salad for lunch earlier this week.
At my Mother-in-law's house I made myself some Organic Ginger Tea. I just love everything about tea, the ritual, the flavor, the way it warms your soul. I don't drink coffee (haven't in 5 years), so this is my warm drink of choice. 
I also picked up a Raw Chipotle BBQ Sandwich from Live Jolly Foods. I brought this home to have for lunch on Sunday.
Um, AMAZING! The patty had a BBQ flavor on it and was topped with kale and a raw "onion ring". The bread was really soft and tasty as well (Baby A had a few nibbles of the bread and LOVED it). 
I hope you all have a great day! We started our seeds this week for our annual organic garden. This is the first year we are growing from seed instead of trans-plants. Any suggestions or tips are welcome! We've had such great success with trans-plants that I am a little nervous to change it up! XO

Chocolate Fever

Hey All! I hope you had a great weekend! Mine was EPIC! :) I am feeling 100% again and I am able to eat and enjoy my favorite foods. Feels great! I have a lot of pics from the weekend, but I have to type a quick post now, so hopefully that will be up on Wednesday!


Anyway, I am back to juicing, FULL ON GREEN POWER!!! Baby A enjoys this too (she likes watching me juice, hopefully soon she can help out!). This juice was Romaine, Apple and Lemon. Yum!
T brought me home a little treat on Friday! He saw this Raw Chocolate Brownie at Whole Foods and said he thought of me! ;) 
REALLY GOOD! I love raisins in my chocolate! 
Baby A has been eating bigger dinners lately (and still not much during the day still, just boob!). Anyway, this was one of her dinners: coconut milk yogurt with green powder added, raw carrots, cooked chickpeas, raw avocado and apple sprinkled with cumin and raw kraut and cucumber sprinkled with dulse.
T had ordered me some raw chocolate from Heathy for Valentine's Day (YES! MORE CHOCCIES!). Anyway, Heathy was kind enough to add a few little samples. If you haven't had her chocolate, you must order some when she sells it online again. This stuff is amazing! Most is raw (except one peanut butter cup): Raw Truffles, Almond Butter Cups, Caramel Pecan Cluster (my FAVORITE!), and Chocolate Raisin Clusters. This gal has talent, watch out raw chocolatiers! ;)
I was very happy to be able to enjoy a little chocolate again, as you can tell by this post! ;)

Happy Belated Valentine's Day!

Hey Lovebirds! Sorry I haven't posted, just trying to get out of this nasty flare. I had to give in and start steroids again. Yup, back to square ONE! And I'm not very happy about it, but I am happy to report that I am feeling close to 100% again! And I should be starting another treatment next week (and then weaning from the steroids). Anyway, more about that soon (and my new game plan to kick my diet up into full-green gear).  

When I was finally feeling better, I was craving some greens and since my body wasn't ready yet, I made myself smoothies like this for breakfast and lunch. This had Spinach, Banana, Almond milk, E3live, Vega Protein Powder, Chlorella, Wheatgrass Powder, Kale, Sunflower Lecithin, Sprouts and Maca in it! Phew, talk about GREEN POWER! 

I also have been enjoying hot water with lemon, turmeric and ginger in it. Very soothing to my stomach.
Juice is always on the menu. This one was apple, carrot, beet, lemon and ginger. Baby A liked this too!
For dinners I had bland foods like regular and sweet potatoes topped with coconut oil.
Then finally, on Valentine's Day, things were looking up big time! ;) T got me some fair trade flowers..
And a few raw chocolate bars and cookies from One Lucky Duck (unfortunately, I wasn't able to enjoy these yet, but yesterday I felt well enough for a piece.. or 2!).  ;)
This was my big dinner on Valentine's Day (I obviously couldn't eat it all, but it didn't bother my stomach at all). We had (prepared by T!): sugar snap peas with garlic and ginger, white button mushrooms stuffed with gluten free bread crumbs, seasoning, garlic and parsley and spinach risotto. YUMMY!
For lunch later in the week, I had my first Sunshine Burger in awhile! I enjoyed it on a romaine leaf with sprouts, Bubbies pickles, avocado and a sundried tomato. Man did I miss these!

Superbowl, That's How Roll!

Hey Friends! I hope you all had a great week! I know I said I would be back on Wednesday, but, I usually don't have time during the day to type up my posts, so I do them the night before. Well, Tuesday night came, and I was all warm and snuggling with my little girl and I couldn't tear myself away. Baby always comes first! :)


Well, I had my second infusion yesterday and I had an allergic reaction. My throat closed up, I couldn't breath, I almost passed out. Luckily, the nurses are always around so they gave me some antihistamines, which of course, I had an reaction too! They got enough in me before I started to react, so that made the reaction go away. I felt sick the rest of the day and I can no longer take that medication. I have tried every medication they have on the market and I am allergic to 3 of them and the others don't work at all. So I am waiting to see what is going to happen next. Many suggest holistic medications, etc and those who have reading my blog for awhile know I have gone that route. When I did, I lost so much blood that my blood count dropped to 3 from 13 and I was hospitalized (on 2 different occasions of trying the holistic way). My doctor told me I almost went into cardiac arrest. So that was when I woke up and realized that my case is too severe to only use the natural way. I am not going to lose my life because I don't want to take medications. Sorry to be harsh, but it's true. :(


Anyway, these are some pictures from last weekend and earlier in the week. We hit up our juice bar one day and I had this pressed juice: "Hawaiian Chlorophyll"- Kale, Parsley, Cucumber, Spinach, Celery, Romaine and Pineapple. Yummy!
For the Superbowl, I made Raw Tacos. I mentioned on the Ginger is the New Pink Facebook Page that I would be making these and everyone wanted to come to my house! ;) I used this recipe and added my own guacamole and raw olives. 
I have been drinking more green juice again and everyone has been commenting on my skin! I tell ya, this stuff is magic!
This juice had romaine, kale, pear, cucumber and celery in it. 
One night for dinner I made a big batch of red lentils with low sodium veg broth, garlic, olive oil, celery, chickpea miso, carrot and I added quinoa to it. What a yummy idea! I garnished with some scallion.
I also made some almond milk! YUM!!!!!!!! Baby A had an almond milk mustache, I wish I took a picture!! ;) This was the first time she tasted any other milk besides mine, I was glad to see she liked it. Of course, Mommy's milk comes first! (By the way, that's T's wheatgrass underneath!)
I used the pulp to make some almond cookies. I added raw coconut nectar, raw carob and cinnamon. Unfortunately, these were too dry to swallow! LOL! T and I nearly choked! I think I dehydrated them for a little too long. Opps!
I needed some good reading material for when I have my Crohn's infusions (which won't be happening now!). I was excited to find these two gems for $5 at Barnes and Noble! SCORE!
Another great find from the week: fresh organic turmeric! I've been adding some to my smoothie, I can't wait to juice some!

Still Celebrating

Hey All! I hope you had a great weekend! Did you watch The Superbowl? I'm not much for football, but I do root for the Giants when they play! ;)


Anyway, before the weekend, I had some yummy eats! I ordered Raw Onion Bread from ChocolaTree on Amazon (I have a ton of gift cards). The bread was really tasty!
Baby A and I had some with avocado and sprouts on top! Mmm! So good!
I found Emmy's Raw Granola at my Home Goods.. SCORE!
I made a big green smoothie in a bowl and added some on top. Now that's a happy breakfast! :)
This green juice was Romaine, Parsley, Kale, Apple, Ginger, Lemon, Celery and Cucumber. Baby A and I shared, as always!
T took off from Wednesday on (for my birthday!). He got us lunch one day, I had a big salad of spring mix, chickpeas, olives, artichokes and black beans.
I had some new kale chips this week from Alive and Radiant Foods: Southwest Ranch (these were DELICIOUS!).
And Tarragon Dijon (I found these to be sweet, but very flavorful).
On Friday night we had my sister, cousin, brother, sis-in-law (bestie) and my bro-in-law over to celebrate mine and T's birthdays. Here we are, happy family!
My sis and bro-in-law bought me these Archangel Raphael Healing Oracle Cards! I LOVE this gift! For those that don't know, I have a big oracle card collection. I can't get enough! 
T was in PA on Friday to do some business and he picked me up a gluten free vegan cake from Vegan Treats! This was the "Chocolate Peanut Butter Bomb!" I forgot to take a picture until after we cut slices.. OPPS! This was TO DIE FOR! There is still some leftover if you want a slice? ;)
