Goodbye 2012!

Happy (almost) New Year!!! What are your plans for tonight? T and I are staying in and playing Dance Party on the Kinect with Little A, my Bestie-sis-in-law, Bro-in-law and my new little princess niece. We will probably order sushi or something (veggies for me). Should be fun!

This was my dinner one night recently: a kale salad with a Hilary's veggie burger crumbled in and mashed cauliflower. Yummy! 

This was Little A's plate: golden berries (she LOVES them), avocado, raisins, white beans and chickpeas with Indian spices (she loves Indian flavors) and mashed cauliflower. All organic, vegan and gluten free.

I was in the mood for something naughty over the weekend so I made this recipe for a vegan version of In-and-out burger. I used a gluten free English muffin instead of a regular bun. This was really good, but rich. I didn't feel the greatest after. I've mentioned in the past that I'm not a huge fan of Daiya, and with holiday meals, I've been overdosing on the stuff lately! :(

My lovely friend Lauren, sent Little A this beautiful pin that she made. She will be opening an Etsy shop soon and I will be sure to share her page with you! She was also sweet enough to send Little A an Elmo lunch box, and for me, my favorite raw vegan "onion rings" and rose infused cacao powder (more on that coming!).

We had to return a few things at the mall this weekend so we had lunch at The Cheesecake Factory. The last time we went, I had a great salad so I knew they were very vegan friendly. This time I ordered two salads off of the "small plates" menu. The one on top is the Greek salad without cheese and the bottom one is the Endive salad again, no cheese.

Later on I enjoyed this smoothie: banana, spinach, Sunwarrior Chocolate Warrior Blend, Cordyceps, Reishi, cacao powder and water.

Later, T took Little A and I on a sleigh ride! How fun!!! :)

And finally, this is the Cacao powder that Lauren sent me. We warmed it up with some with warm water for a nice raw "hot" cacao treat. I'm loving this shop on Etsy. I bought a few things from them after trying their cacao mix. Check them out: Flying Bird Botanicals.

I really like the look of the mashed cauliflower - how do you get it so fine like that? I thought it was quinoa or something.
The In n Out burger does sound decadent but looks reeeeally good. Happy, healthy new year!

Happy new year, Lauren! Of course I thought that burger looks amazing. And the cacao powder, too. Looking forward to another year of delicious eats and treats :)

Every so often I make something decadent like that vegan In and Out burger (although I haven't tried that yet). I love it in the moment and regret it later. I totally know what you mean.
