Food Highlights from The Week

Hey! Happy Friday! I had a great week that included going to the pool with my sister and my bestie-sister-in-law, playing at the park and enjoying life with Little A.

Here are some food highlights from the week:

Raw Chocolate Ice Cream (Organic Nectars) topped with Lydia's Rawnola! Mmm!
Cumin and Lime Chickpea Salad (from Pinterest) with grilled eggplant. This would be a great dish to bring to a party.

This was some Organic Broccoli Slaw that I got from Trader Joes and topped with kale chips, garden cucs, Bubbies Pickles and some hummus. I also like to make this with mashed avocado instead of hummus, it's like a coleslaw! YUMMERS!

This was dinner one night: quinoa with a sweet potato that I baked and then mashed into the quinoa and broccolini that I sauteed in garlic and olive oil.

Every so often I get in the mood for tempeh. I coated some with gluten free bread crumbs and sauteed it in a pan until crispy then added tomato sauce and added it to some broccoli and quinoa.

I had a coupon for Zukay, so I bought their Tomato Olive Dressing. This is pretty good, a little watery and doesn't stick to the lettuce well, but has a great flavor.
I love these Tarragon Dijon Kale Chips from Alive & Radiant Foods! Nom, Nom, Nom!

And finally, we have a ton of cucumbers from the garden so I have been juicing a lot again. This was romaine, cucumber, apple and lemon.

Yummy! All your quinoa bowls are getting me hungry. I have so many garden cucumbers too! Ive been juicing those babies up. Glad you had a fun week!

That juice looks like what I've been having a lot of lately. The cucumbers are so big and sweet here right now. Perfect for giant green juices.

Love the flavor combo on those kale chips.

Tarragon Dijon Kale Chips - sounds delicious, and so does raw ice cream. luckily I made some today to enjoy ;)

saw those kale chips--too bad they have sugar...i hope they reforumlate them. maybe i can make a knock-off.

the ice cream looks so good! everything does. i think i'm hungry. ;-)

Looks yummy Lauren! I am craving quinoa right now!! I l also just bought an ice cream maker and would like to make raw ice cream - but need to find some recipes online first. Great post!!
