Weekend Farm Love and a Recipe

Hey Chick-a-dees!


I hope you all had a fun weekend. We went to a BBQ for T's grandmother on Saturday. I brought a bean salad..


Crunchy Bean Salad (High-raw-vegan) Serves A LOT! ;)


All beans are Eden Organic BPA free cans.


2 cans of chickpeas
2 cans of kidney beans
2 cans of pinto beans
1 can of black beans
4 stalks of Celery diced
4 Carrots diced
One big handful of Italian Parsley diced
Coconut Vinegar (or Apple Cider)
Olive oil
Salt/Pepper to taste
A sprinkle of Cayenne
Italian Seasoning


Drain and rinse beans well. When dry, add to bowl with carrots, parsley, celery, seasonings and olive oil and vinegar (I don't measure, so use as you would a salad). Mix well and refrigerate. Serve cold.
After that, T and his brother went to Atlantic City for a bachelor party, so my Bestie-Sister-in-law and I grabbed dinner. We dropped Little A off at my parents and went to Pizza Fusion for some organic pizza to-go. We took it back to my parents and ate with Little A (her plate coming soon, along with a big post with a bunch of her meals). For my pizza, I had a gluten free crust with spinach, artichoke and Daiya cheese. Some of you know I have a weird relationship with Daiya. I like it once in awhile, but only a little. This was WAY too much, I'd much rather a ton of veggies and a little sprinkle of Daiya. Oh well.
For breakfast, I made Kristen's Acai Bowl! I topped mine with Raw Cacao Granola, Banana and Raisins. I also used frozen cherries instead of Tropical Fruit. YUM! This is delicious!
I received a sample of Freeze-Dried Reishi Mushroom powder and I added that to a smoothie over the weekend.
On Sunday, we went to Basil's for some shopping and lunch. I had my usual, a big organic salad with GF Falafel and Hummus.
After that we went to a farm near there to play with the animals.
This cow was super friendly. Little A laughed every time it "Mooed!"
This beautiful field of Sunflowers was calling me. I had to take a picture. We are growing Sunflowers in our yard this year, can't wait for them to pop up!
I had this salad later on: Cucumbers, Bubbies Pickles, Fermented Red Cabbage and Tomatoes.

A Hail Merry Raw Miracle Tart..
And some Hail Merry Raw Chocolate Macaroons (these things are addicting!).

I haven't had bean salad in quite a while and your recipe looks delicious! I don't buy non-dairy cheese very often but when I do it's usually Daiya. I have tried it on pizza and a little goes along way, I learned the hard way.
