Weekend Eats and Diet Update

Hey All! I hope you had a great weekend! Ours was busy, as usual! :)


I picked up some vegan fermented kimchi at Whole Foods on Friday. This stuff is awesome!!!!! I bought the mild variety because my stomach doesn't do well with spicy. 
I added some to a big salad for lunch. This also had mesclun, avocado, broccoli sprouts and hummus in it! Mmm! So good!
For dinner I was inspired by Gena's Sweet Potato Rounds, but instead of making the rounds, I just steamed a sweet potato and added black beans and guacamole on top. I also had a side of broccolini with garlic. 
Saturday morning I made this tasty smoothie: frozen cranberries, frozen banana, Sunwarrior Chocolate Warrior Blend, Spinach, Maca, Chlorella, E3Live, Almond Milk and Green Powder.
We had lunch at Whole Foods and I made a big box of goodies! This had hummus, raw kale and avocado salad, white beans in tomato sauce and 2 Indian Burger Cakes (they were made with chickpeas, spinach and Indian spices. Gluten Free and Vegan!).  
T and I had a little sweet tooth over the weekend, so we hit up Papa Ganache Vegan Bakery and got some gluten free goodies. The one with the sprinkles were "Meatballs" which were a bunch of different things all wrap in one, we also had a Death By Chocolate Cupcake, Samoa Cookies and a Mint Chip Cookie Sandwich. We shared everything (over 2 days!). Papa Ganache is my favorite vegan bakery because they carry a lot of gluten free items, most are organic and they don't use anything artificial. Their ingredients are quality!
For dinner I made this recipe: Cozy Millet Bowl with Mushroom Gravy. Only I made it "high raw" by keeping the kale raw. I also replaced the cornstarch with Quinoa Flour and instead of Tamari I used Coconut Aminos.
 Lately my diet has been all raw (with the exception of a Sunshine Burger or hummus in my salad) until dinner. Then for dinner I try to have something "high raw" or I include a raw component. Or sometimes dinner will be all cooked. I'd say 4 days a week, my dinner is part raw. Saturday's I don't really worry about it (hence my Whole Foods lunch and the vegan treats). But I find when I stick to eating that way 6 days I week, I feel my best. I am also loading up on green juice more. GREEN POWER BABY! XO

Yeah, super pretty desserts. I wanted to make that comforting millet bowl too. Keeping it part raw is a great idea; I'm sure the rest of it wilts it down enough.

I just love Papa Ganache soooo much. Every now and then we drive down from Brick so I can get a few gluten free desserts. They have the best ones there and it's the only bakery around here that makes gluten free vegan!

Your eats always look good to me. I try not to focus on each and everything I eat, as intuitive eating works best for me. Most of the time it's raw, but sometimes it is cooked, too. I just go with what I feel like at the time.

I am on a similar raw path as we've discussed before. Sometimes I lately I do have a little protein at lunch like hummus or beans, it just depends. The sweet potato/guac/black bean combo sounds great, I would probably also forgo the rounds and just do as you did.

Have you make those homemade sunshine burgers yet? They are amazing. From vegan chickpea.
