Going way back to last weekend, T, Baby A and I went to the mall (which is a rare occurrence, LOL), but I had gift cards for Nordstrom that I wanted to spend (and still have some left over! SCORE!). Anyway, we had lunch at Cheesecake Factory.. I know, doesn't sound very healthy, but to my surprise, they had a healthy menu with some great salads (when you take off the chicken, cheese, etc). I ordered a salad that had romaine, beets, asparagus, apple, edamame, peppers and tomatoes on it. The portion was perfect and it was pretty tasty!
| For dinner one night we had a big salad that I topped with White Bean Sweet Potato Burgers! I used gluten free bread crumbs and quinoa flour instead of the gluten ingredients. I cooked them in a pan with coconut oil. They came out amazing!! |
| Another dinner we had one night was a Buddha Bowl: raw kale topped with broccoli sprouts, raw olives, avocado, cooked quinoa and black beans. |
| After making almond milk this week, I made Gena's Almond Cookies (I made them raw in the dehydrator). They came out a lot better then the last batch I made! Yummy! |

Hi Lauren! I was wondering, how do you put chlorella in your smoothies? Do you use chlorella powder? The tabs seem too tiny to put in my blender? Thanks girl!
Hey Mary, I use the tablets because my baby likes to chew on them. They work fine in the vitamix for me! :)
Hmm when I went to cheescake factor several years back I found NOTHING. maybe they have changed, good to know. i was less likely yo eat salad back then maybe i overlooked that.

I am addicted to your site! You are lovely and very real. I spent more then and hour one your blog the other night. I have learned a lot. I have been Vegan for three years and every time I get sick I hear "How can you be sick, your Vegan" or "See you are getting sick because you don't eat meat" I hope you can full recover. I don't know anything about what you have but I do wish there was a instant cure for you.
