Spring has Sprung (FINALLY)

Hey All! I hope you had a wonderful week! The weather has been so warm here and we are loving all the time outdoors! Look at how much our garden has thrived! :)
I will get back to that later... Anyway, this was a delicious meal I made for dinner one night: raw kale, black rice, hummus, chickpeas and avocado. 
Back to the garden, I harvest mesclun all week for lunch!!!  So delicious and soft! And the best part.. It will grow back for another round!! This was a salad I made with a Sunshine Burger, hummus, Bubbies and raw olives.

T is still growing wheatgrass like a mad man!! Ha ha! He juices it then freezes it in ice cube trays so that none goes to waste! 
And finally, no post is complete without a little chocolate. This week I bought the Chocolate Chip Mint flavor or ChocAlive raw vegan truffles.
I liked the pistachio better and usually mint chocolate is my favorite! Oh well, I wonder what flavor I'll try next..

Easter Recap

Happy Belated Easter! Baby A had a wonderful first Easter and 5 month birthday! ;) Here is our little family (minus Ginger) on Easter. Sorry for the lighting!
Here was my Easter meal: gluten free pizza topped with roasted artichoke hearts, broccoli rabe, zucchini, eggplant and sauce. T made everyone personal pizza. Sooooo good!
My Mother-In-Law bought us raw vegan chocolate Easter bunnies from One Lucky Duck!
I felt like "One Lucky Duck" indeed..
Here is Baby A's Easter basket filled with organic outfits, an organic dolly, eco friendly BPA free teething rings and the book "Herb the Vegetarian Dragon."

Raw Love

Hey Everyone! I hope you had a nice week. In my last post I mentioned that we had my Father-in-law and his girlfriend over for dinner/BBQ. Well, this was the big salad I had mentioned. Lots of goodies in there: mesclun, tomatoes, cucumbers, avocado, white beans, artichoke hearts, olives, roasted peppers. Yum!
I had to order myself a "Foxy Raw" tshirt from Callie's site as soon as I could! I also ordered a few "Rawxies" to try. These raw, gluten free, vegan cookies are so yummy! My favorite is Cranberry Pecan and Cinnamon Raisin. Which normally I would never choose. I am definitely a chocolate chip kinda gal, but these are so good, I had a change of heart! (No pun intended since the cookies are shaped like hearts!). He he!
For dinner one night, I made a big kale salad and collard wraps filled with tomato, avocado, hummus and cucumbers. This was a perfect light meal, just what I needed after eating so many "Rawxies"..lol!
And even more hummus! This was a snack I made of garlic hummus and cucumbers sprinkled with curry powder.
Busy weekend ahead! Baby A will be celebrating her first Easter! I bought her a bunch of organic toys and clothes to fill her basket with (I'll post a pic next week). She also has a pretty Easter dress and bonnet (again, a pic will be posted!). Have a wonderful weekend everyone! XO

Tea and Chocolate = Happiness

Hey Everyone! I hope you had an amazing weekend. The weather was kinda wacky here (one day of horrible rain, then sunny but really windy). That was the downside, the upside was arriving home from a walk and seeing a package at my door! Sacred Rose Teas! The company sent me a few flavors to sample.
These teas are wonderful quality, and so fragrant! I opened the package and was blown away by the beautiful smell. They are really tasty and I love that they are organic! (The picture below is tea.. no funny comments! LOL!)
I had a delicious salad one afternoon of mesclun, Bubbies, avocado and hummus.
I picked up some ChocAlive truffles from Whole Foods. My Whole Foods now carries a huge assortment of flavors! I had to choose only one because the price tag was pretty hefty!
I was very happy with my choice of pistachio! Wow, We! Yum! Can't wait to try some other flavors!
We went out for my sister's birthday on Saturday night. Baby A came too and sat on T and my lap. She was very good! ;) I started off with a Live Lemonade (lemon, apple and ginger). Perfectly sweet and pungent!
T and I split the hummus with crudite. The hummus was extremely strong with curry flavor, which you know I love! T on the other hand, not a fan!
T and I both ordered the same thing for dinner, The Love Bowl. This was greens, vegetables, black beans, brown rice and tempeh coated with a peanut sauce and topped with sesame seeds. We both really liked it but couldn't finish. I found the more I ate, the heavier it got. I don't do well with soy anymore. I have barely had it since Baby A was born.
So that was most of the weekend. Yesterday we had my father-in-law and his girlfriend over for dinner. Nothing fancy, I had a potato with coconut butter on top and salad, lol! ;) I'm not big on BBQ!

TGIF

Happy Friday All! I hope you had a lovely week. I am extra excited for this weekend because Baby A and I are going to the vegan restaurant near my parents, for dinner with my sister to celebrate her birthday! :) Do you have anything fun going on this weekend?


Onto food, earlier this week, I made a big kale salad and topped it with cannelini beans, sun dried tomatoes and millet. I've been reading a little about the radiation in Japan and now I am worried about eating my greens! Anyone know the situation? What we should or shouldn't be eating? I read seaweed is helpful, so I am going to stock up later today.
For lunch one day I had a big salad of mesclun, sun dried tomatoes, raw kraut and a crumbled Sunshine Burger! YUM!
For dinner another night, I made quinoa and zucchini topped with tomato sauce and cannelini beans.
We had a couple really nice days this week. Baby A and I got out for a few walks..

I Heart Weekends!

Hey Buttercups! I hope you all had a great weekend!


Mine started off on Friday with grocery shopping and dinner at Whole Foods. I had raw kale and some channa masala and rice on the side.
Saturday we went down to see our families and we stopped off at the health food store for lunch. I had the raw collard wrap that I always get (the cashew mayo is so good!!) and some Italian flavored kale chips on the side.
We had dinner at my mother-in-laws house. She made a big feast: brown rice with black beans, sauteed peppers and potatoes and broccoli rabe.
And of course a large salad with romaine, vegetable slaw, kale, cucumbers and tomatoes.
When we got home, I was excited to see a book I had pre-ordered had arrived! My friend Judita came out with this fabulous book filled with a ton of info on raw foods and some amazing, drool worthy recipes! I can't decide what to make first! ;)

Bowl-ing

Happy Friday All! TGIF!! :) Actually this week went by pretty fast and since the weather was a little warmer, I took Baby A for a walk almost daily! Now we just need some sunshine! Major overcast over here in NJ. Anyway, onto food, my favorite kinda meal lately is a raw veg (I like using greens) with a grain, beans and avocado. Similar to a Buddha Bowl. There are so many different ways to make this, I never get sick of it. It's high raw too! This one was raw collard, black rice, cannelini beans and avocado. I like to season with a little Nutritional Yeast and ground pepper.
This one was raw red kale, millet, black beans and avocado. I made this bowl with a Mexican flavor by adding cumin. Salsa would of been a good addition too.
This was a yummy lunch salad of mesclun, radishes, Bubbies, avocado, hummus and a left over Aduki Burger.
This is what I am talking about with the weather.. I took this when we went for a walk one day. Luckily, we didn't get rained on! ;)

Eating and Eating

Hey Everyone! I hope you are having a great week! Thanks for all the birthday wishes for my little fur-daughter, Ginger. She had a fabulous day filled with presents and lots of spoiling (the spoiling part happens everyday!). Anyway, going back to the weekend, T, Baby A and I did our shopping at Whole Foods and had some lunch (salads for us, boob for Baby A.. Well actually she was sleeping, so nothing for her!). My salad was raw kale with red onion and avocado and I topped that with a bean salad.
I picked up some Almond Milk yogurt. They are new to me, and I haven't tried yet, but I'll let you know what I think! :) Anyone try them? They are cultured too!
My Whole Foods also had Raw Cacao L.O.V.E. Cups! I had these before and they are super good!
Cacao Chips galore! YUM!
And lastly, a meal I made earlier this week: quinoa with tomato sauce, eggplant and zucchini. So good!

All Planted

Hey Love Bugs! I hope you had an amazing weekend! :) Before I get into that, I wanted to give you an update on P90x. Today we start phase 3, which means only 33 days left! I really am enjoying it, and I've lost weight and inches. After we finish, we are going to start Insanity. Anyone do it? How did you like it? Results? 


Onto the weekend.. T, Baby A and I went for a little trip to pick up the lettuces and kale for our garden. We wanted to plant organic trans-plants, which aren't easy to find (at least not in NJ). We found a place online that wasn't a retail shop, instead you order ahead of time and pick them up. We will be going there for now on! Before we picked up our veggies, we stopped at a health food store/deli, that we love to visit when we are in town. I had a big salad with falafel and hummus. This was so good!!
I also picked up a Blueberry Muffin LaraBar. This was my first time having this flavor, and while I was impressed with the flavor, I wasn't impressed with the ingredients. For some reason it had fruit juice concentrate in it. To me, that just shouts "SUGAR!".
When we got home, we hung out outside while T planted. I helped where I could, but I was busy with Baby A and this one..
The weather was so beautiful! It was so nice to sit outside. Baby A has a new organic sun hat, you like?
We got 4 different varieties of organic lettuces and organic red leaf kale.
Yum, mesclun! I can't wait to enjoy some in a few weeks (the lady said, the mesclun will be ready then!). Lettuces are fine in frost and cold weather, we will be planting our other goodies in May.
All set! Lettuces, kale and radishes are all planted in organic mushroom compost!
After all that work, I made a nice hearty meal of Pasta Fagioli (with gluten free pasta). Recipe here!
On Sunday, we had some errands to run (GINGER IS TURNING 5 TOMORROW!). When we got home, I whipped up Bitt's Adzuki Burgers! They came out really delicious! I had one topped with some hummus over a kale salad of red kale, Bubbies, avocado and radishes. Thanks Bitt! I am so glad I have leftovers for my salads this week! ;)
