Is there a new drink in town??

Hey Sunshine! I hope you all had an amazing weekend! Before the weekend began I made myself this yummy high raw lunch: raw crackers topped with hummus, avocado, sprouts and olives. I sprinkled curry powder on top (of course!).
For dinner one night, T brought home soup from Hale and Hearty Soups. This was Spinach White Bean. So good!! I love that they have vegan soups, I find a lot of places use chicken broth! YUCK!!!
Here are my sprouts!!!! They are almost ready! The ones I had growing on the bottom weren't growing so I got rid of them. Oh well.
Yummy, yummy! I can't wait to enjoy my own fresh sprouts!
For dinner one night I made a new favorite: millet with raw kale, sun dried tomatoes and cannelini beans. Another tasty high raw meal!
I was super excited when I saw my Whole Foods was now carrying KeVita. Kristen drinks these all the time, and I was intrigued because of the high probiotic content. Kinda like a new Kombucha! I believe they are considered raw. I bought 3 flavors, but I only tried the Coconut so far and it was really tasty! I'll report back on the other flavors as I try them. And yes, I know I am getting carried away with the "New ___ in town" titles..hehe!
On Saturday we spent the day at my Mother in laws house. We like to have lots of family around Baby A. My 2 brother in laws and my future sister in law (my bestie) were there too. Good times! :) For dinner we had broccoli rabe and a huge salad. I went back for seconds! ;)
Sunday we went grocery shopping at Whole Foods and had lunch. I made myself a salad with lots of raw kale, guacamole, olives, quinoa and chickpea salad and black beans.
The weather this weekend was pretty nice. We took Baby A and Ginger for a nice walk on Sunday. We always enjoy the fresh air and vitamin D!! I hope it gets warm soon!!! We can't wait for Spring!!

Nourishing My Tummy and Heart

Happy Friday!!! I hope you all had a great week! On Wednesday I had some blood work done. I wanted to get my vitamin D and some other levels (Crohn's related) checked. I will let you all know the verdict when I find out. They took 6 vials! Eek! Good thing needles don't bother me (I am so sadistic, I watch the whole time! HE HE!). 

Anyway, when I got home, I did my P90x workout, then I chugged this: Broccoli stems, Kale Stems, Green Apple. I had to replenish my blood! LOL!
The other night I made another recipe from GLiving, very similar to the delicious Cauliflower soup I made not that long ago. This was Creamy Broccoli Leek Soup. So good!!!
One night I made an amazing kale salad with quinoa, millet, white beans, sun dried tomatoes and avocado. So yum!

There is a new vinegar is town..

Hey Everyone! I hope you are having a great week! This week is week 3 of P90x! So far, I feel good and I feel tighter in spots. From what I read, around day 30 is when results will become more obvious. So we will see! ;)


Anyway, T bought me the coolest thing ever.. some organic seeds to go with..
A seed sprouter!!!! Super cool, right? (NERD ALERT)!!! Here are my little seeds, I started it on Monday night. I should have sprouts in a few days!!! I'm way too excited!
One night for dinner I made myself a big kale salad with radishes (forgot how much I love them!), sprouts and raw sprouted sunflower seeds. Yum! Kale salads are my favorite thing ever!
This was a delicious lunch I made one day: romaine, olives, radishes, sprouts, and a Breakfast Sunshine Burger. I forgot how much I like the breakfast patties. My favorite is Garden Herb and Original, but I like to switch it up!
I've been topping my salads with Raw Coconut Vinegar instead of Apple Cider Vinegar. This stuff is seriously delicious! I bought it at Whole Foods, but you can buy it online too. Not as acidic and pungent as Apple Cider Vinegar, more sweet and tolerable. Mmm, I love it!
Speaking of Whole Foods, we had lunch there after grocery shopping over the weekend. I made myself a kale salad with raw mushrooms, olives, carrots, cauliflower and black beans.
Also going back to the weekend, we ordered Sushi for dinner one night. I had all brown rice rolls: shitake mushroom with avocado, cucumber avocado and avocado rolls. Hmm, I sense a theme? ;)
A yummy Chipotle style bowl I made on Sunday night: romaine, pinto beans, avocado and black rice. Have you had black rice? It's super high in antioxidants and it's so tasty! I find it to be creamier then brown rice.. if that makes sense.
This was a yummy juice T picked me up one day: carrot, apple, spinach. Simple and delicious!
And finally, a chickpea salad that T also picked me up at the juice bar. I added raw kraut to  it. Yum!

Happy Days!

Hey Love-bugs! I hope you had a fantastic weekend! We had some family over on both days, which was nice, and today my sister might be coming over (and bringing a vegan lunch!). Too bad it's already Monday! :( 


Anyway, I made this yummy salad for lunch one day: romaine, avocado, raw sprouted crackers, curry powder, apple cider vinegar and olive oil. I just picked up some raw coconut vinegar from Whole Foods, I excited to try it out tomorrow!
One night last week, for dinner I made kale, olives, sun dried tomatoes and artichokes hearts with quinoa. Remember I made it with "the rubber band pasta?" This time it was perfect!
Green juice I made with veggie scraps: daikon stems, kale stems, celery, green apple.
T brought me home a yummy raw wrap from the health food store near his mothers house (he was working down there). Inside was cashew mayo, lettuce, sprouts, purple cabbage, tomato and carrots. SO GOOD!
We had some incredible weather on Thursday and Friday of last week! Mid 60's and sunny! T and I brought Baby A for her first (and second) walk! I took these pictures are the park we walked around..
Snow is still melting. With the amount we had, I don't think it will all be gone till June! LOL!
And there's the goober! All wrapped up! My aunt made her that fabulous blanket. I just love homemade gifts!
Can't forget about Ginger! She was happy to get out and move her little body again!
I picked up 2 organic fair trade mango at Whole Foods! Really felt like Summer! Ha ha!
On Friday, T picked me up this salad for lunch: Romaine, Carrots, Avocado, Broccoli, and I added raw sprouted sunflower seeds on top.
And finally, a yummy kale salad with millet, white beans and avocado. The perfect dinner in my book! ;)
I haven't even gotten to my weekend pictures yet! I'll be back soon! XO

Valentine's Lovin

Happy Friday!! To back track to Monday, here are the organic fair trade roses T bought me for Valentine's Day..
So beautiful and they smell amazing! I love not having to worry about sniffing in pesticides. I can really "Stop to smell the roses.." Ha ha! Nerd Alert!
T and I made a special dinner: White beans, broccolini with garlic and spinach and mushroom risotto. This was so delicious!! What a perfect meal!
T also surprised me with a raw chocolate truffle box from One Lucky Duck!
So delicious! We shared a couple of them, but we still have a few left! ;)
I hope you all have a great weekend! T and I brought Baby for her first walk yesterday! The weather was finally warm, and today will be as well! I can't wait to take her again, she loved it! I'll have pics from that in my next post! Until then, have a great weekend!

There is a new burger in town..

Hello Sweethearts! I hope you all had a nice Valentine's Day! I will post my Valentine's Day stuff on Friday! For now, there is a new veggie burger in town...Little Green Burgers! I found these at Whole Foods last week. They had a few different flavors, this one was the Indian flavor and is gluten free, soy free and vegan--perfect! You all know how much I love curry! He he! These burgers don't hold together as well as Sunshine burgers, but they are large and thin, so they cook fast.
Check out those ingredients, nothing yucky in here!
I crumbled mine over some romaine (of course) with sun dried tomatoes, carrots and avocado.
Another yummy find: "It's Alive" Raw Sprouted Seeds: Thai Curry and Garlic Spice.

And Green Smoothie Crackers.. I enjoyed these in the car while nursing Baby A! We were at the Health Food Store and she wanted to eat, so did I! ;)
I also had raw vegan egg salad! YUMMMMMM! I wasn't a fan of regular egg salad, but this was delicious! I spread some of it on the raw crackers. So good! We had a little picnic in the back seat (of course we weren't driving!!! Had to add that disclaimer!).
Before that I downed a green juice while shopping: cucumber, celery, kale, romaine and apple.
Later on we went to my Mother in law's for dinner. We had a big salad..
And an artichoke stuffed with quinoa (she just steam it with some cooked quinoa and garlic stuffed inside) and broccoli rabe. I get asked a lot about broccoli rabe. This is one of my favorite vegetables. Growing up in an Italian family, we would have it cooked in lots of garlic and olive oil along side a nice loaf of Semolina bread. Now a days I cook it with a little less oil, but a ton of garlic and drizzle lemon on top. It can be very bitter, so not many people like it. I would suggest ordering it at a restaurant, they usually get it perfect. Just make sure they don't use butter.
My Mother in law and I made chocolate covered strawberries! We melted down a few Theo Bars and dipped organic strawberries. Amazing!
And finally, on Sunday we had lunch at Whole Foods after grocery shopping. I made a big salad of kale, carrots, daikon, cucumbers, olives, shredded zucchini.
