A Very Special Thanksgiving!

Hey All! I hope you had a great weekend and a wonderful Thanksgiving for those in the US! We had a lot going on this long weekend. Baby A had her first birthday on Thanksgiving Day! I can't even express how wonderful her first year with us has been. She truly is a blessing and the light of my life. I couldn't think love could be this strong, my heart has grown bigger since she has been in my life. :) I still can't believe it has been a year! We had a rough start, but everyday with her has made my life complete.


Anyway, I'll post about Thanksgiving in the post and her party in the next one. 


My Thanksgiving meal (all gluten free and vegan): Stuffed artichoke!
My plate: Broccoli Casserole (my mother in law cooked broccoli, Daiya Chedder, gluten free bread crumbs and Veganaise in a casserole dish in the oven. Sounds like a weird mix, but it came out AMAZING!!!), cranberry relish (raw, I made this with walnuts, agave, cranberries and orange all processed in the food processor), brown rice with apples and raisins, mashed potatoes (T made those with coconut creamer, Earth Balance, parsley) and sweet potatoes made with pineapple. Everything was delicious! My favorite was the broccoli casserole, soooo good!
Baby A had her own little tray: broccoli mashed with coconut oil, soaked raisins, white beans, apples and avocado and sweet potato. Everything is organic and vegan!
For dessert we had vegan/gluten free pumpkin pie (T bought this from the health food store).
I made a raw apple tart. I used the fruit tart recipe from Going Raw and traded the berries for apples. I have made it with the berries in the past and it is always a hit!
I had a slice of both.. ;)
Mmm..
Baby A had lots of presents to open, even though her party wasn't until Saturday!
I have a lot more coming from her birthday party!!! Come back on Wednesday! ;)

Everything looks great. Can I come next year? No one knows how to make so much GF vegan food in my family. They expect me to make it all!

I wanted to make an apple cobbler that was raw but I was having trouble finding a recipe. Now I know where to get one! Anyhow, happy thanksgiving. It all looks delicious.

i hear your sweet little munchkin! She's so dang cute! I love her pineapple tray. And what yummy eats! I want the broccoli casserole too. The stuffed artichoke looks really tasty too.
