Long Weekend Fun

Hey All! I hope you had a great weekend! Ours was extra long and extra fun! ;) T is off of work this whole week, so have have some fun stuff planned for our "staycation". We were at the shore the whole weekend. But before that, on Friday night I made some raw kale and topped it with some gluten free cous-cous (found it at Whole Foods) and sundried tomatoes. Yummy!


For dessert (later on), some of my favorite, WATERMELON! Gotta eat it up while it's still in season! Most of you know, our love for the pink stuff. When I was pregnant, I ate it daily! ;)
On Saturday, we headed to the shore to begin our long weekend. We hit up The Twisted Tree Cafe for a yummy vegan meal!
I ordered a smoothie called "The Twisted Hippie"--Strawberries, Bananas, Oat milk and Hemp Protein Powder.
I also had a garden salad with a side of hummus! The hummus was so good and their Miso Dressing is to die for!
On Saturday night, we had an anniversary party to go to. T's Great Aunt and Great Uncle were celebrating 60 years together!!! Here we are! Baby A had her ears pierced earlier! :)
On Sunday, we started our day at the beach..
It was Baby A's first time! 
After that, we hit up the Farmer's Market in Red Bank. Lucky for me, The Cinnamon Snail Vegan Lunch Truck is there every week! I ordered the raw pizza, it came with a kale/arugula salad on the side. The salad had some spiced nuts on top that were so good! The pizza was amazing, best raw pizza I have ever had. Their raw pizza actually tasted like pizza. The crust was soft and thick, like bread and the sauce was sweet. The olives on top gave it a nice salty flavor. Mmm..
I also had a raw brownie from the truck..
So rich and chocolately! I was in heaven!

I just read about the Cinnamon Snail truck in the new VegNews. Hopefully I can catch up with them someday. I want to try that pizza! People have been posting about the GF couscous. I'm eager to check it out.

What a nice weekend! Enjoy your staycation, too.

Delicious foods! My mouth is watering! I miss raw pizzas, nuts, etc. Only 17 more months... lol

Ahh I am so jealous you're near the Cinnamon Snail. I miss it soo much! I want to convince him to start one out on the west coast. That pizza looks awesome!
