Garden Explosion

Hey All! Thanks for entering my latest giveaway. I will post the winner at the end of this post.


This week has been crazy! T's brother and my bestie are getting married on Friday! T is the best man and I am a bridesmaid. We are super excited! I will take lots of pics, since she is a vegan, there will be plenty of vegan options!


Anyway, I picked up some new raw kraut this week. This is made locally (in New York). I really should make my own, but who has the time!! ;)
I tried it on a salad of romaine, hummus, Bubbies, a Sunshine Burger and cucumbers from my garden. Yummy! 
Speaking of our garden..

Our cucumber wall! We let Baby A lick a little cucumber this week. She seemed to like it. We plan on introducing some solids in the near future. She will be 8 months on the 24th, so probably sometime in August since she is starting to show signs. We plan on making the bulk of her diet still breastmilk until she is at least a year. :)
Another Buddha bowl: raw kale, olives, avocado, hummus, millet and black beans. I cooked the millet in coconut oil instead of olive oil and it came out super yummy! Almost "buttery!"

your garden looks great. and kraut is so simple and inexpensive to make. the ghetto way anyhow.=)

making kraut does not take that much time but patience it does require. but if you have a baby you are off the hook. ;-) i love my local kraut and have been enjoying that too.

congrats to your friend on the wedding! it will be nice having options to eat, most weddings are pretty tough to get fed at as a vegan.

Wow your garden looks beautiful!!!! Thriving and gorgeous! I am a huge fan of the sunshine burgers, they are about as natural as you can get for a cooked burger and so tasty!!! I love that there are only like 4 ingredients or something like that, yum!

I thought I didn't have time to make my own sauerkraut....well, until I did it. It literally took me about 20 minutes, start to finish.

6 cups shredded cabbage (I just did this by hand with a sharp knife)
4 tbsp sea salt
2 cloves garlic, thinly sliced (opt)
1 c onion, thinly sliced
2 jalapenos, thinly sliced (opt)
1 tsp mustard seed
1 tsp fennel seed
2 cups water
2 probiotic capsules

In a large bowl, I put the cabbage and salt and just beat it with the end of a large cooking spoon until it was pretty limp. Stirred in the garlic, jalapeno, onion, and seeds. Pack into a quart mason jar. Whisk water and probiotic together. Pour over sauerkraut until at the neck of the jar. I folded up a whole cabbage leaf and put it on top to keep it pushed down. Fill up to about an inch of the top with the rest of the water. Put lid on, almost completely and sit on counter in warm spot for 4-6 days until you see bubbles.

It's delicious and seriously easy!
