Talk about Insanity

Hello Butterflies! I hope you are all having a beautiful week! :) I started my week off by starting the Insanity workout program. T and I finished P90x last weekend and now we are doing a hybrid of P90x/Insanity. There were a few elements of P90x that we didn't want to give up by just doing Insanity, so we are doing a mix. So far, so good! But phew, those workouts are exhausting!


Anyway, I mentioned that I harvested some kale from my garden. Here it is! For some reason when we grow our own kale, it is so much better then the kind you find in the store. A lot softer, crisper, lighter. Mm, so good! I just walk in my backyard with a knife and cut it from the stem. Talk about local!
I made this batch into a kale salad with avocado, raw kraut, olives and lemon juice. So good!
I love my green smoothies in the morning, but sometimes I feel like something different. So I pour my smoothie into a bowl and add some raw granola on top. This was chocolate flavored! Yum!
Callie was kind enough to send me a sample of her newly formulated Cinnamon Raisin Walnut Rawxies! I thought they were amazing before, but now they are perfect! Thank you, Callie! So yummy!!
Finally, one night last weekend we steamed artichokes. I love artichokes, they are definitely one of my favorite veggies! This was steamed with garlic and olive oil then drizzled in lemon juice! So delicious. I wish I bought more! ;)

I love Insanity! We just got gym memberships and are training to run our first 5k but when I have a non-gym day I try incorporating Insanity into my day.

I totally admire you for trying those hardcore workouts! I feel nervous just THINKING about P90x or Insanity. Haha. You're awesome, lady!

mmm artichokes. I still haven't had one this season! Your kale looks awesome, like nothing I've seen in stores. Kudos for growing your own food.

What kind of kale is that? I only know of the curly and dinosaur kinds.

I haven't had a steamed artichoke in ages! Maybe it's time.

I love local kale, I used to grow it, year round! So much better homegrown, as most things are.

Those Rawxies sure are good. I wish her so much luck with her business.

This all looks great. I love the look of your kale. I just bought some at the store this week and I was not so happy with the texture and feel of it. I must grow it. Your smoothie and granola looks yummy.
