Nom, Nom, Nom..

Happy Hump Day All! I hope you are all having a great week! Day 3 of P90x down, so far, so good! ;) Although, I am sore!!!!! But I love it! Anyway, I have a ton of food to post again. What do you like, posts with a few pictures at a time, or a bunch at once? I've been posting so many pics per post, so I was just curious! 


Anyway, here we go! Over the weekend I made a delicious pasta dish: kale, tomato sauce, olives, artichoke hearts, sun dried tomatoes, garlic and olive oil over gluten free Mung Bean pasta. I'm not going to lie, the pasta tasted like rubber bands, lol! But the sauce was amazing! I just sauteed 4 cloves of garlic in olive oil, added half a jar of crushed organic tomatoes (I buy these in a glass bottle because of the BPA in cans), then I added some Italian seasoning, sea salt and pepper and let that cook for a few minutes. After that I added the kale and let that wilt, then added the olives, sun dried tomatoes, artichoke hearts and let that marinate while the pasta boiled. When the pasta was done, I added it to the sauce and let it warm up. I think I will make this sauce over some quinoa next week! So yummy!
I made this smoothie one morning, that would be PERFECT for Valentine's Day: frozen strawberries, frozen bananas, spinach, maca powder (libido booster!), almond milk.
T, Baby A and I took a little ride to Evolution Burger over the weekend. T had been wanting to check it out. I ordered a vegan veggie burger wrapped in lettuce and he ordered the non-vegan veggie burger. I thought it was pretty good, he thought it was just okay.
T and I stayed in and had our own little party for the Superbowl (surprise, surprise, lol!). We like being with each other, I guess that's a good thing! ;) Anyway, I made myself a lovely little snack plate: Brad's Raw Chips, Carrots and Celery with hummus and guacamole.
I also ordered a gluten free, vegan pizza! This had Daiya, spinach, olives, mushrooms and artichoke hearts on it. I really should know by now, I am not a fan of Daiya. Too real, too heavy, too rich. Well, that's my opinion.
This was a yummy salad T brought me home for lunch: romaine, carrots, mushrooms, avocado, bean sprouts, sunflower seeds.
And going back to last week, a delicious soup I made with low sodium veggie broth, kale, cannelini beans, carrots and celery. I just cooked some garlic in olive oil added the celery and carrots until soft then added the broth and beans, season with salt, pepper and curry powder and add the kale at the end along with more seasoning and miso (I use South River, soy free!). Simple and delicious!
And finally, this was from a trip to Whole Foods over the weekend: lots of raw kale (it's under there!), lentils, quinoa, carrots, olives. cucumber. We've been bringing Baby A out more, mostly grocery shopping at Whole Foods. She usually sleeps the whole time! :)

I love your posts with all the tasty food, makes me hungry though. hee hee.
If I'm using Daiya in a recipe or in something I learned to use half of what I think I would need because it melts so much and it is rich like you said.

Oh and it's a good thing you like hanging out with T, I mean, you are kind of stuck with him. lol!

Thanks for your HONEST reviews. Bummer the pizza was too rich. I find a light hand with the Daiya is best.And not all GF pastas are great either.

I do not mind a lot of pics or a few, whatever is easier for you, new mamma!

haha rubber band pasta. I was reading and thought ooo, mung bean pasta!, glad to get an honest review ;) I enjoy Daiya, but it makes me eat things like grilled cheese that I feel better not eating...
WHatever works for you for pics!
Good for you guys for working out, how fun to do it together. I've been really lax on that myself.
What organic tomatoes are you finding in glass jars?

Chocolate Covered Strawberry

For 2

1 cup fresh or frozen strawberries

1 cup fresh or frozen raspberries

1 cup frozen banana

1½ cups coconut water

1½ cups cashew milk (OR, 3 cups of either one)

2 heaping tablespoons yacon powder

2 heaping tablespoons lucuma powder

1 heaping tablepsoon maca powder

2 tablespoons vanilla extract

2 tablespoons agave nectar or pinch stevia (optional, if you like it extra sweet)

Pinch Himalayan sea salt

1 heaping tablespoon cacao powder (add for second half)

Put all the ingredients except the cocoa powder in the blender and blend. If it’s too thick add more coconut water or cashew milk. Taste and add agave or stevia if you want it sweeter (or, more lucuma). Fill two glasses halfway, using about half of what’s in the blender.

Add the cocoa powder to the remaining shake in the blender and blend. (add cacao nibs too if you like those in your shakes). Top off the glasses with the chocolate. It helps if you pour it gently around the inside perimeter of the glass (otherwise it will just fall straight down in the center and you won’t get the pretty layers). Put a raspberry or strawberry on top and sprinkle w/ cacao nibs. YUM.

I don't mind the post filled with a couple of things. I just bought Daiya today and tried it for the first time. Really for my daughter. I am not sure that I am loving it. Love the truth about the rubber bands. I like buckwheat noodles.

It all looks great.

i'm down for post full of lots of eats, Lauren - they always make me most happyfaced! that's too funny that Ms. A sleeps during your grocery trips - makes it kinda nice and easy for you and T. yay! i love hanging out with dan as well - you've gotta love making a good team with someone! huzzah!

comforting soups, a tasty pasta dish (even if the pasta itself was kinda "meh"), rock'n salads, and a not-too bad veggie burger. yummers, fo 'sho!

daiya and i are "kinda-sorta" friends. i like it alright in little amounts. when we make pizzas we just put maybe 1/4 cup on ours and that's it. just enough to taste it a little but not enough to overload. so awesome on the gluten-free pizza option though. score!
