Happy Days!

Hey Love-bugs! I hope you had a fantastic weekend! We had some family over on both days, which was nice, and today my sister might be coming over (and bringing a vegan lunch!). Too bad it's already Monday! :( 


Anyway, I made this yummy salad for lunch one day: romaine, avocado, raw sprouted crackers, curry powder, apple cider vinegar and olive oil. I just picked up some raw coconut vinegar from Whole Foods, I excited to try it out tomorrow!
One night last week, for dinner I made kale, olives, sun dried tomatoes and artichokes hearts with quinoa. Remember I made it with "the rubber band pasta?" This time it was perfect!
Green juice I made with veggie scraps: daikon stems, kale stems, celery, green apple.
T brought me home a yummy raw wrap from the health food store near his mothers house (he was working down there). Inside was cashew mayo, lettuce, sprouts, purple cabbage, tomato and carrots. SO GOOD!
We had some incredible weather on Thursday and Friday of last week! Mid 60's and sunny! T and I brought Baby A for her first (and second) walk! I took these pictures are the park we walked around..
Snow is still melting. With the amount we had, I don't think it will all be gone till June! LOL!
And there's the goober! All wrapped up! My aunt made her that fabulous blanket. I just love homemade gifts!
Can't forget about Ginger! She was happy to get out and move her little body again!
I picked up 2 organic fair trade mango at Whole Foods! Really felt like Summer! Ha ha!
On Friday, T picked me up this salad for lunch: Romaine, Carrots, Avocado, Broccoli, and I added raw sprouted sunflower seeds on top.
And finally, a yummy kale salad with millet, white beans and avocado. The perfect dinner in my book! ;)
I haven't even gotten to my weekend pictures yet! I'll be back soon! XO

What awesome meals -- I'm loving the quinoa dish and the green smoothie -- I've been having a green smoothie with every meal (I'm on a cleanse) and I still think they're delicious. Glad you like them too -- most people think I'm crazy!

yay on the quinoa dish - looks great! Perfectly filling too I bet. The veggie wrap looks soooo good! And look at sweet beautiful Baby A! She's a doll and the handmade blanket is beautiful too.

Wow everything looks awesome. The wrap looks amazing. I could go for that now. Also the juice looks good too. Mine is on the fritz so I skipped my juice today. Love all the food. Your daughter looks really cute. Loving the homemade blanket, they are the best.

I've been eating tons of those mangoes =) Did you read the sign by them about how to tell when they're ripe? If they're the same ones (Kent I think) the sign talked about how they can still be green and firmer when ripe, they are so delicious! Your quinoa looks awesome.
