Happy 2011!

Happy 2011 all!!! I hope you all had a fabulous holiday and New Year's! We sure did. Laying low is my all time favorite thing to do on New Year's Eve. I'm all about ringing in the new year with my loved ones, a movie and a wine glass full of Kombucha! ;) On New Year's Day, T and I celebrated 10 years together! Everyone always asks if we were high school sweethearts, and we were not. T was already in college when we met, and he didn't even go to my high school. We met through some mutual friends, he was 18 (almost 19) and I was 16 (almost 17). His birthday is at the end of this month and mine is a week later, the first day of February. So lots to look forward too! I am so excited for 2011. I feel such a wonderful energy with my new family and I want this to be my healthiest year yet. 


Anyway, on New Year's Eve, T picked me up some roasted vegetables from a local Italian deli. These are so flavorful, the owner said he only uses olive oil and seasonings, but the flavor is outrageous!
For our New Year's Eve feast, T made some delicious vegan mashed potatoes (he boiled the potatoes with cloves of garlic then processed them with unsweetened coconut milk creamer, seasonings and Earth Balance). They were to live for! He also made some stuffed baby portabella mushrooms (stuffed with breadcrumb and seasonings) and Field Roast Celebration Roast. Usually, I am not a fan of mock meat AT ALL. But I really like Field Roast and the ingredients aren't fake, everything you can pronounce! Although, in the New Year I think I am going to cut out gluten again. My tummy wasn't too fond of it. I guess the pregnancy "I can eat gluten now" thing wore off. :( This plate is missing some greens, but we did have a small side salad (forgot to take a pic).
For dessert I made a raw vegan lemon cheesecake from Sweet Gratitude. I finally got a copy! :)
This was super delicious. I love lemon in desserts! I can't wait to make more desserts from Sweet Gratitude.
On New Year's Day we headed to visit our families, down at the shore. It was really beautiful out (almost 55 degrees!), so it was nice to get some fresh air. I ran into my favorite health food store (while T, Ginger and Baby A stayed in the car). I grabbed a large green juice that had kale, lemon, apple and a shot of wheatgrass. This was super strong, but I chugged the whole thing! ;)
I also picked up some raw tacos. Yummy, yum, yum!

That juice sounds and looks so great, we're ordering our juicer today, SO excited!
Your cheesecake looks awesome. I was wishing last night for a piece of ours, but the whole pie went to my parent's ;)
Your feast looks yummy too! I've been trying to stay GF now, but have previously loved the Field Roast products. They are especially handy for packing hubby's sandwiches for lunch.

Sorry the tummy is more sensitive now. Bummer. The raw tacos look so good. And very funny you had the same split pea soup from whole foods!

I never thought about boiling cloves of garlic with the potatoes, but now my interest is piqued. I may have to try this!

What a lovely meal! I have never had Field Roast.. it looks good to me though.. but that green juice is what is screaming DRINK ME!! I may have to splurge this week and get some good organic greens for some juicing.

10 years... congratulations!
