Hey All, still preggers over here!!!!!!!!!!!!!!!!!! I'm remaining calm, relaxed and TRYING to be patient. I have a doctors appointment today, so we will see how that goes. Every morning I wake up, turn to T and say "Am I really STILL pregnant?" to which T replies, "I have a feeling TODAY is the day!!" This has been going on for over a week now, lol! I still have over a week until my due date, so I shouldn't complain. I am just soooo excited to have my baby girl in my arms! Plus, my house couldn't be any cleaner right now. It's sterile! HA HA!
Anyway, on Monday I made a big pot of Pasta Fagioli. Mmm.. this soup is so good! My only complaint was I forgot to buy fresh basil so I had to use dried herbs and that "freshness" was missing.
Here is my recipe:
Pasta Fagioli
I saute 5 cloves of garlic in a big pot in olive oil until fragrant. Then I add about a tablespoon of tomato paste, some dried Italian seasoning, sea salt and pepper and let it cook until it turns an orange color. Then I add whole tomatoes or jarred crushed (depending on the season). I let that cook down (if using whole) until it makes a sauce. I add a bay-leaf now. In a separate pot I boil enough water for however much pasta I am using (I use gluten-free). I let that cook and put to the side. I go back to my original pot and add 4 cups of white beans (or 2 cans, if using cans I only use Eden since they are BPA free and have lining inside). I stir them in and add some more Italian seasoning, pepper. Then I add a whole box of vegetable broth (I use low sodium). I let that boil then bring it to low and add in the pasta and any other seasonings it needs (taste to see). I also add a scoop of soy-free miso at this time and fresh Italian herbs (basil, oregano).

| Over the weekend, T made Multi-grain Pancakes and Tempeh bacon for dinner. I am not a big breakfast person (I don't like to feel weighed down during the day so juice, smoothies or oatmeal are my normal choices). But I was having a craving for pancakes, so we had them for dinner! T made them because, As I mentioned, I don't eat many "breakfast type" of foods. This was a rare treat, but really delicious! |

| We checked out a new wellness boutique that opened in our town. I was so pleased to see they carried Gnosis Chocolate! I grabbed the Vanilla Hazelnut. So.amazing. This reminded me of Nutella a little, the hazelnut and chocolate together = the perfect combo! |
 |
| I was also pleasantly surprised to see some other great items, like tea, jewelry, toiletries. I picked up some lotion that smells so freakin good! |
 |
| All vegan and the ingredient list is impressive. No chemicals in this lotion! |
 |
| Another plus, the girl that works there is a vegan!! It was nice to chat with another vegan since there aren't many in my hoity-toity town. |

I know everyone was excited when I showed you all the seasonal Theo Bar I got at Whole Foods last week, well this week this had another seasonal vegan bar! Peppermint Stick! I am not a big fan of Candy Canes, but this taste more like chocolate with a slight mint flavor. There is tiny little pieces of candy cane throughout the chocolate. So rich and refreshing!
 |
| I also made gnocchi over the weekend. I bought them from Whole Foods and made my own sauce with soy-free Earth Balance, garlic and parsley. These hit the spot! |
 |
| Have a great day everyone! |

she'll be here soon, Lauren! every time i see a post from you pop up in my google reader i wonder, "is it starshine?!" that's awesome you're house is all cleaned up and ready to go - and stocked up with yummies, too. i'm not a big breakfast person either. i eat breakfast everyday, but this morning i'm having black-eyed peas & tomatoes. i like to keep it light and savory, although a treat like those pannycakes are great - and tempeh bacon, too?! YUM! i've gotta find that vanilla hazelnut chocolate - and the peppermint stick on as well. oooh, and i'm gonna make your Pasta Fagioli, too. once again you've got me drooling with another tasty post full of yumminesses. hope your week is going well, my friend! `
same with Jessy when I click in from google...is she here? ;) I've been craving pancakes a lot here, I'm not prego, but we've been indulging anyway since hubby loves them. Ok, so the Theo seasonal bars have not made it to MI, I hope they will! I can't wait for the day that a store around us carries raw chocolate bars!
Your pasta fagioli sounds great, thanks for sharing the recipe! That is a soup that I occasionally miss. We used to serve a really yummy one at a coffee shop I worked for ages ago, we'll have to try yours. Good call on the Eden beans, I love Eden. They're actually very local to us here. I love that brand of lotion too, I've found that shea butter is my moisturizer of choice now.
My hubby would love gnocchi for dinner!
Ok that's it, I'm heading to Whole Foods to check out the Theo selection. I still haven't tried the toffee one, now I see this peppermint one, I think I'll need to buy both!
I love your breakfast for dinner plate, that tempeh bacon looks extra crispy and delicious!
Can't wait to hear the big news soon!
My guess what the 18th! That means she'll totally be here tomorrow! ;)
I have a feeling your day is going to be soon maybe tomorrow or Friday ;) Thinking of you dear friend!!!

Awww, sorry to hear you're playing the waiting game! Soon, though, soon. I can't wait for her to greet the world. And I know you can't either :)
It must be so hard to wait, but she'll come when she's ready. some people induce on a certain date I guess but that would be too predictable, huh?
Love all your Italian eats. Fresh basil is the best. Keeping an eye out for that peppermint stick chocolate. That's one of my favorite varieties.
i love theo chocolate! it is really worth every extra penny it may cost over another brand. i toured their factory (after "planning" on it for a couple years now..) and their operation is really impressive.
the pasta e fagioli sounds great too. i may have to make that for dinner!
I remember that feeling, especially with my second daughter, who was born on her due date! I'm thankful, though, that I didn't go late with either baby. I think I would have gone insane!
Keep eating well! You'll need lots of good energy for having and taking care of your beautiful baby!
I don't know how you are containing your excitement, Lauren! I'm looking forward to your post announcing the birth of your little girl! xox
The anticipation is so hard! I'm betting on the 21st ... which is the full moon.
All that food looks fabulous!
This is probably the most detailed recipe you've ever posted, and I am going to treasure it. Pasta Fagioli is one of my all-time faves (my Mom's too)!!
I dunno...still think she's gonna hold out a wee bit longer. Sagittarius girl. Fire baby.
It's is so hard when you get so close! I remember feeling like I couldn't go another day no matter what!!
Love your soup.. yum.. yay .. breakfast for dinner!
aww, the anticipation must be crazy! i remember how it felt waiting for my niece... you must be feeling it times 100! sending you lots of love and female strength!=)
