Pumpkin it Up!

Good Day Everyone! I hope you are having a super week. I'm busy getting things done before the baby's arrival! So much to do, so little time! :) 
Anyway, I've been in the kitchen a lot lately. This was a pumpkin and white bean dish that I got from Whole Living Magazine (formally known as Body + Soul Magazine). The recipe was pretty simple, I used a whole pumpkin and cooked it whole in the oven then peeled it and adding the flesh to a pan that the white beans, onion, garlic and tomato paste were already cooking in. I also added my own pumpkin seeds as garnish. This came out pretty good. I really don't have too much success with making recipes out of magazines, weird. We are never 100% crazy about them. Oh well, still super nourishing.
Over the weekend, I picked up homemade ravioli's at Whole Foods. These were obviously vegan and had vegetables inside. After they cooked, I added them to a pan with olive oil, seasonings and a little tomato paste. They came out really good, although the pic looks really bad! :)
Speaking of pumpkin, at the Farmer's Market this week I picked up some vegan pumpkin bread from the same stand I got my vegan goodies last week. So funny, I RARELY post sweets or baked goods (mostly because I don't bake often and when it comes to sweets I am simple, dark chocolate is my poison of choice!), but lately I've got sweets galore going on! Must be the pregnancy! ;)
And more sweets for your liking: a vegan pumpkin oatmeal cookie from the same stand. I love that all of her goodies are made with organic, local, fair trade ingredients, and only the best wholesome ingredients. She uses spelt flour for her non-gluten free items and  organic evaporated cane juice for sweetener.
For lunch I've been switching back and fourth from kale salads and wraps. This was a spelt wrap with hummus, soy-free miso, avocado, spinach and nutritional yeast.
And another yummy dinner: brown rice with kale, soy-free miso and butternut squash. Mmm, so good! My favorite thing to do with any grain is to add a piece of kombu and soy-free miso for nutrients and flavor. I remove the kombu once it is cooked.
Lastly, my ENTIRE pregnancy I've been waiting to park in one of these spots. I know, silly, but I just wanted to feel special! We finally got to do so when we visited Babies R Us over the weekend. I was stocking up on organic diapers (cloth and regular). I don't think you can ever have enough diapers!

you crack me up, Lauren - i love it! glad you got to finally take advantage of the expectant mother's spot. yay! i've never had much success with magazine recipes either. i'm sorry the dish was a bit disappointing, but i'm glad the ravioli was awesome! i bet kale and butternut squash made for a heavely combination, and one you can bet i'll be trying soon. i always love your bowl combinations - and i'm loving the avocado 'n noochy wrap. so yummy! you know, i've never thought to try out spelt and see how it goes. just always figured it was gluten and not just wheat i have an intolerance to. i might have to give it a whirl and introduce some spely sometime - i'll know pretty quickly if it's a no go, but it's worth a shot! the pumpkin oatmeal cookie looks fantastical - gotta love all the quality ingredients it was made with, too. nice! my day's off to a wonderful start and i hope yours is, too!

Your rice bowl looks sooo good! Perfect fall meal...one of many. :) And I love pumpkin bread! Mmm...so good! And zucchini too. This post is making me hungry. I'll have to look for that ravioli next time.

I've always wanted to park in one of those spots too. I'm not pregnant though, but I just thought it was sweet that pregnant women get to park up close.

Recipes from magazines always suck when I make them ;) It's not just you! I tried many times to make things from Vegetarian Times, and it was always aaaaawful. lol :)

LOL, I always get a kick out of those signs that say, "Stork Parking" for pregnant mommies.

Wow, this is Whole Living Magazine's 3rd incarnation! I can remember when it was New Age Journal.

Your one-pot meals always look so inviting. When you're not replicating recipes out of magazines, do you just create off the cuff? A little of this, a little of that...or do you have a fave go-to vegan cookbook?

I am a huge pumpkin lover too! It's one of the best things about fall :) And I love that you had soy-free miso...I have a soy allergy, so I'm always interested in soy-free foods and recipes.

EM--I usually make things from the top of my head or I get ideas from bloggers and put my own twist on it. If I make something from a cookbook I'll mention it, but that rarely happens. :) XO

you are so right..you can never have enough diapers! both cloth and regular. we did mostly cloth but regular are necessary...and you always need more than you think, totally :)
