I'm Growing!

Hey Everyone! Sorry for the lack of posts last week. I've been doing some serious nesting, cleaning things that I haven't cleaned in awhile like our nightstands, book shelves, chandelier! You know, the things that collect dust and books! :) I am thinking that's probably how it's going to be once the baby comes. But at least I'll have more pics per post. :) Here is an updated belly picture: 32 weeks, in my 8th month!
Last week I made a yummy wrap using a spelt wrap, hummus, massaged kale, Bubbies raw pickles and avocado. Yum!
Over the weekend, T and I hit up the Whole Foods salad bar. I made mine a high raw meal. This was Channa Masala and a kale salad, I added some olives, nutritional yeast and raw cabbage to the kale.
I cracked up when I saw Ginger sitting like this the other day. Her leg looks so funny! Of course, she thinks nothing of laying on the top of our couch.
More kale salad for ya! This time I added avocado and garden tomatoes (sadly, this was the last of our garden. We still have a few tomatoes, but that is it). On the side are cannelini beans. T makes them really creamy. He just lets them cook down for a long time and adds garlic and seasoning. So simple, but so delicious. And yes, Earthmother, there is nothing this man can't do! ;)
We hit up a new store in town: Alan's Orchard. They have lots of local goodies and I was super excited when I heard the owner mention a gluten-free vegan brownie!
I was loving the ingredients, not only is it made local (in Pennsylvania), but all the ingredients are healthy and pronounceable (white bean puree? Love it!). Something I rarely see in cooked vegan desserts. By the way, it did have coffee in it, and I don't drink coffee, but a small amount of caffeine in safe during pregnancy (hello, chocolate?).
So delicious! Some gluten free treats taste funny to me, but this didn't at all! So creamy, soft, rich and amazing!
I also picked up this raw bar at the Health Food Store yesterday. Turns out it's just a Pure Bar with a new wrapper! :) Oh well, still yummy! I think I am on a brownie kick!

just a little while longer and you'll get to meet your little one, Lauren - how exciting! i love your idea to make a super tasty kale wrap. i haven't had those brown rice tortillas in a looong time, think i need to pick some up later this week and follow your lead! i love T's way of cooking white beans - we love to do that with butter beans, too. so yum! hooray for one deeeelicious gluten-free brownie. i'm glad it rocked and didn't taste out of sorts. a lot of gluten-free baked desserts taste a little odd to me too. i think people go nuts with the xantham gum sometimes. ah ha ha! i haven't had a pure bar in such a long time, it's probably been about a year. i'm remembering now how awesome their brownie bars are. yummers! sadface on the last of the tomatoes, but i'm glad you had such a beautiful and plentiful garden this year. that's so awesome! and ginger's cracking me up! she always makes me smile. :) i hope your monday's off to a wonderful start!

I love the belly! It's been beautiful to follow your pregancy. You're due at the same time as my friend and its funny listening to how similar your habits are! She too is on a cleaning mission right now! That brownie looks delish too. Have a wondeful week Lauren xxx

All the foods look good and I love that you love beans as much as I do! Mmm!

I think I heard somewhere that weeks before your due date it's good to consume larger amounts chocolate - it's supposedly helps when in labor. I dunno...research that one but hey, either way, it's all good. :) So excited - not too much longer! You should have a post where we all post our guesses on dates/weight/height/etc.

You have the best little baby belly! I'll bet you guys are soooo excited! What a fun time of life ... I remember back in the day when I was pregnant with my kids... it is just sooo exciting!
