Anyway, I felt that I should share my story, since so many others are sharing about their own healing process and the changes in their diets. I want people to know veganism (with a balance of cooked and raw) can heal too. It's not one size fits all, but it's always worth a shot.
Phew, so onto a more amusing topic: FOOD! I found this little jewel at the health food store over the weekend: a rambutan. Some of you are probably going to think it looks gross (Gena, I know you will!). :) But it was actually pretty tasty. Like some sort of berry.
I actually bought a few, they are pretty simple to open and eat. Although, the fact that it looks like an egg, kinda creeps me out.
I also picked up some raw organic pumpkin seeds. Yum! I read that pumpkin seeds are a great food to eat while pregnant. They are good for brain and nervous system development. Plus, they have a good amount of protein. I have been adding them to everything!
Of course, kale salads have been my staple. Although, I had a few months when I couldn't even think of kale. I know, crazy!!!!!! This one had avocado, olives, pumpkin seeds, sprouted sunflower seeds and Bubbies pickles in it.
Unfortunately, this past month, or so, I had to stop drinking my morning smoothie. They were making me gag and I was feeling sick all morning after drinking them. So I switched over to oatmeal. I like changing it up and adding in different things. I added Sunwarrior protein, raisins, almond butter and almonds to this bowl. Perfect for the chilly mornings we've been having (believe me, I am not complaining).
Over the weekend we went to the Farmer's Market. There is a vegan baked goods stand there that has a wide variety of gluten free items. All of the stuff they sell has pure wholesome ingredients too (no egg-replacer or stuff like that). I picked up a delicious gluten free oatmeal chocolate chip cookie! Wow! This was so good!!!!
And T convinced me to grab a loaf of vegan zucchini bread. I have never had zucchini bread in my life. I MISSING OUT!!! This stuff is delicious! As you can see, we had already gotten into it before I took a picture. He he!
And one quick story from the Farmer's Market.... There is a stand that sells pickles, and gives out pickles on a stick. Well, just about every kid walks around eating a "Pickle-on-a-stick", and guess who was right there with the kids eating one.. PREGGERS! HA HA! Yes, I was the only person over the age of 10 walking around with one. It was quite funny! Have a great day all! XO

Haha, I have to admit the egg-fruit freaked me out a little when I saw the picture. I'm intrigued! And I'd definitely be eating a pickle on a stick with the kids, and I'm not pregnant! Hehe.
I'm soglad that you're healing, feeling great, and AMEN to no bashing (you don't think I do, do you?!). xoxo
Too funny about the pickle on-a-stick thing, hahaha :-D
Great post!!
I love rambutan! I had some local rambutan from a farmers market in Hawaii when I was there a few years ago! They're really delicious, though sort of creepy-looking. :)
How the heck have you never had zucchini bread?!?! Probably my favorite bread ever. You were missing out! :)
With the exception of the fruit, which TOTALLY FREAKED ME OUT AS EXPECTED, this post is amazing. Thank you for writing it, and for sharing your healing story via veganism!
Whoa...I've never seen the inside of a rambutan! How weird!
This is a really refreshing post. I think this type of post is definitely good for vegans (and aspiring vegans like me) to read this week. I know that by going mostly vegan (some things still slip in unfortunately, but I do better everyday!) I have felt better than I ever have this year.
Thanks for posting your experience. :)
Pickle-on-a-stick...only you find that eh? lol!
I've had a couple of people in the past saying they were vegetarian until the doctor said they needed to bring up their iron levels and they needed to eat steak. That's just always the first thing these doctors say.
Whenever I tell people I eat a plant based diet, instead of just saying I'm vegan, they respond by saying"your vegan than, right?" So it is just easier to say vegan.
i would have been right there with ya eating a pickle-on-a-stick too, Lauren! i absolutely LOVE pickles (and sauerkraut!)! oh, and i totally had a WWLD (what would Lauren do?) moment last night. i got home from yoga class and i was ravenous - i was thinking about a veggie burger and these crinkle fries we had in the freezer and then i thought, how about something a little more green? so i cooked my sunshine burger with a sweet potato and wrapped both halves of my burger in raw collards (i didn't have any kale. sadface) & topped it all with some sauerkraut. i think it's my new favorite way to enjoy a veggie burger. thanks, Lauren! my sweet potato & greener veggie burger really hit the spot! ;)
i'm glad you posted your story about how veganism has healed you. i've been pretty darn sadfaced to read about people going back to eating animals. i know that everyone is different, and that we all have to listen to our bodies & do what's right for ourselves, but i can't help but feel sad about it all. especially because veganism has helped me so much as well. for me, eating non-human animals (and their products) doesn't make my heart sing. the idea of a non-human animal being killed (or having something stolen from it) is something i'm not willing to partake in or support. i don't agree with violence in any form, and i view my veganism as the very least i can do to respect every life on this earth. as for listening to my body and trying my hardest to be healthy - i like to think about this analogy i once heard: "take an avocado and an egg - bury both of them in the ground. what happens? the avocado grows and the egg rots." i read Gena's post last night and i loved response in that people should look at everything from all angles before deciding it's veganism that isn't working for them.
thanks again for sharing your story with us, Lauren - and thank you for taking a stand and defending veganism and how it has helped and nurtured you. you're an amazing person and i truly appreciate all of your thoughtful, open-minded, fun, delicious, and warm-hearted posts!
This is fantastic. I'm so happy for you - and for us, for having you to share with!
YAY! Go you! I'm so happy you are doing so well. You deserve it more than anyone xoxoxo
thanks for sharing your healing story, wonderful writing! I have never seen those nori wraps, I may have to order some to try, they sound great! (I wish I could be the person who gets to decide what to order for the health food store, how cool would that be?) We eat almost the same kale salad a lot with pumpkin seeds too, they're so good for us =) I also have never seen or heard of that fruit, it looks like the inside of Cadbury eggs to me! I would be right there with you eating a pickle on a stick, it was one of my favorite treats as a kid, you know out of that big jar ;) Glad you're healed and loving life!!!
mmm, i love rambutan!
Love your story and I hope more people realize that the vegan diet has helped countless people. There are many types of ways to eat vegan so you can't assume one way is the best way. Our needs for different nutrients change as our bodies change--however I feel all these nutrients can be found in a vegan diet (with supplementation of B-12). I don't feel one should eat something if it totally repulses them, as the green smoothies did for you. glad you found something that works.
that fruit reminds me of lycee, which remind me of eyeballs. fail.
I'm eating some oatmeal too now! I cut up a date in there while it cooks, so it totally removed the need for sweetener. My hubby likes it with some maple syrup :)
"There are many ways to heal, everyone is trying to find their own fit."
So true. And we all need to keep that in mind, definitely.
Thanks for sharing your story. I'm glad you're doing better these days.
I LOVE vegan baked goods. A couple times a year, that's one of the only cooked things I eat, and wow is it delish :)
Apparently (and good thing), I've missed all the vegan bashing (seriously where are you guys seeing this?) but have noticed more people moving away from veganism for their own healing purposes. THAT part right there I'm not going to argue with someone over esp if they feel they've tried all that they could. I support whatever is healing so for you I'm so glad you have found a path that WORKS and you're healing and now carrying a healthy baby. To me, that's what matters most. Everything else is just petty to me or none of my business.
Love that you were right up there getting your pickle on a stick. That alone would make me giggle but you know, I'm 8.
And mmm mmm on your kale salad. And the rambutans are so creepy to me! I tried them once though or something similar. Weird but sweet.
Thanks for sharing your story, hearing what works for others is a great tool to help someone else, love it :) You do such great things!!
So glad that you are finding a balance that is working for you and the baby, yay!! :) Sending lots of hugs!!

Can I just give you an award for being my favorite person ever? I was NODDING the entire time reading this, and it reminds me of the post I wrote about my healing struggles. I totally know how you feel on so many levels, and I feel like we bonded initially from our chronic stomach problems.
My boyfriend still eats -some- meat, too. I am similarly as non-judgmental as it gets about food. If people are passionate about it, that's all I care about! That being said, my boyfriend ingests lots and lots of kale salads and hemp--haha! Moderation is key for everyone, it just means different things for each person.
I, too, dislike labels, but I agree with what you said about people "understanding how you eat" by saying you're vegan". I also think it's hard for women who crave different things during pregnancy to deal with that change. Thank you for posting this!
hi mi lady! great post and i love the part about labels having a bad wrap.. i wear vegan proud too ;) i had a yummy cooking tip for your pumpkin seeds! roasted them in a small cooking pan and a little olive oil on low-medium heat, cover with a lid until they are golden brown and have expanded in size.. DELICIOUS! ive been cooking kale, carrots, and onions then throwing the roasted pumpkin seeds on top ) enjoy!!!
