A Book Review: Living in The Raw Desserts

Hey All, thanks for all the kind comments on my last post. I feel it is important to show how veganism can heal, it has helped me so much. I wasn't in anyway trying to alienate anyone. Like I said, whatever you need to try for your health, so be it. I am not going to argue with anyone about their own needs. I just feel that if others can talk about their changes in diet, why can't I talk about how the way I eat HAS healed me? Nothing "fake" there, just being fair to both sides of the spectrum! :)

Anyway, today I bring you a book review! I recently received "Living in the Raw Desserts" by Rose Lee Calabro. I was happy to see that the recipes were simple and didn't involve a lot of effort. Ha ha! As some of you know, I am not a big baker, raw or cooked. So I like when I can throw everything in the blender and voila, dessert!
I made two recipes from the book. First was banana pudding. This was super simple, creamy and delicious.

Banana Pudding from Living in the Raw: By Rose Lee Calabro

2 cups young coconut pulp
2 large ripe bananas
1 teaspoon lemon juice
1 teaspoon vanilla extract

Combine coconut pulp, bananas, lemon juice and vanilla extract in a blender, and proccess until smooth, thick and creamy.Refridgerate 2 hours before serving.

You can also layer with different fruit for a parfait!

I also made "Magical Truffles" these are the perfect treat for the holidays! Again, another super simple recipe. Made with pecans and dried apricot. I saved a bunch in my freezer so I can pop one anytime I feel like something sweet.
Now, onto the fun part! If you click here, you can register for a chance at winning a free dessert book from BookPub Co! There are so many other books I want to check out that they are giving away!

Good luck!

I love hearing how a vegan diet has helped heal, I really feel it helped me (along with my natuopath's help) heal from IBS.
I entered to win a book, thanks =) The pudding sounds yummy...I still have not opened a coconut myself ;) I unsuccessfully tried a few years ago and haven't given it a second go yet...

that's what kinda turns me off to a lot of raw recipes - some of them are fairly extensive and can require ingredients that i've gotta order online (yacon syrup, irish moss, etc.). i'm definitely gonna have to check out this book though, i love that the recipes are simple and they look awesome!! brilliant idea to keep the truffles in the freezer so you can grab one anytime. mmmmm! the banana pudding looks rock'n, too! i hope you, T, and Ms. Ginger enjoy the weekend - and thanks again for sharing your story!

I follow your blog because I am interested in hearing about your journey to health with diet. I have ulcerative colitis, and I am always battling with it. I am waiting for a naturopathic nutritionist to make an appointment with me so I can get some help :(

Yum! The banana pudding looks great! One of my favorite desserts is similar and simple as well... 2 bananas/1 avocado/vanilla/water/cinnamon blend and serve. So creamy and delicious!
