Bestie Birthday Sunday

Hello Butterflies! I hope you all had a great weekend! I have a few meals from last week, but yesterday was filled with delicious food (and a lot of it), so I figured I'd save the other stuff for later on in the week. First though, this is the most fragrant beautiful rose I've ever seen! T picked it for me from our yard! I can't walk buy without smelling it, it's so lovely!
Yesterday, we headed down to our parents houses, at the shore, to have one last visit and see everyone before the baby is born. She is due in almost a month, so we won't be making any long car trips. Our parents are about 40 minutes away and our hospital is about 25 minutes from us, so needless to say, we are hanging tight at home for the next few weeks. But Saturday was my besties birthday! I've mentioned before, my bestie is going to be my sister in law next Summer! She is marrying T's brother! I can't wait! Unfortunately, her Father passed away a few weeks ago. Some of you may remember the prayer request I had a few months back. I'm so sad for her loss. :(
When we got down there we headed to the farmers market to hit-up the only vegan lunch van in the country! Have you heard of the Cinnamon Snail? They hang out in Hoboken during the week and are stationed at the Red Bank Farmers Market on Sundays. T and I always hit it up whenever we are down there on a Sunday. We always get the same thing: The Maple-Mustard Tempeh Sandwich.
Holy crap, this is the best sandwich I have ever had! We LOVE it! The sandwich consists of maple-mustard glazed tempeh, some wilted kale, tomato, onion and Veganaise on spelt bread. We've had it probably only 3 or 4 times, and every time it's always worth the wait! If we lived down there, we'd probably be having it every Sunday! It's THAT good! I think I need to try to recreate it, SOON!
For dinner my Mother in Law made vegan eggplant parm. My bestie and my mother in law are both vegan (thanks too Skinny Bitch and ME!). Ha ha! I've been asked a few times how she makes it.. after cutting the eggplant in slices she coats them with olive oil and then covers them with gluten free bread crumbs. She bakes those until they are slightly cooked and then layers them in a casserole dish with sauce and a little Daiya (sometimes she leaves out the Daiya). The layers go: eggplant, sauce, Daiya, eggplant and so on. Then she bakes it until done. I've made it a few times at home as well. I actually prefer it without the Daiya. This time it only had a little. T obviously dished out the portions, because this portion was ridiculously HUGE and messy! Ha ha!
Of course there was dessert! We had vegan carrot cake from the The Twisted Tree and my Mother in Law made vegan peanut butter cups from The Kind Diet. As you may of noticed, that is her signature vegan desert! She always makes them and they are so delicious!
I was also lucky enough to visit the spiritual store with T and my Mother in Law. T sat and read the paper on the couch they had and some lady asked him if he could give her a "reading!" LOL!! T had to correct her and tell her he was just reading the paper waiting for his wife and mother! Ha ha! I bought a few energy stones (of course), for balance after the baby is born (as if a stone will help..he he). I also got this gorgeous bookmark (I have about 30 bookmarks, I think I buy one every time I am in a book store) and MORE oracle cards (another thing I have way to many of). These are Magical Messages from the Fairies by Doreen Virtue! The next ones I want to get are the Mermaid Cards! :)
We also bought the baby a Christmas dress and an adorable coat and matching booties from a boutique I had a gift card for. You will have to wait until after Christmas to see her in her little dress! It's so precious!!

i'm sorry to hear about your sister-in-law to be's father, Lauren - i will keep her in my thoughts...

it sounds & looks like you and T had a delicious (and busy) weekend. the tempeh sammie sounds absolutely excellent, and i think i'm gonna try and recreate that at home, too. the combination sounds great! that's too funny that someone asked T for a reading - glad you got some good stuff at the spiritual store, too. nice! the rose is sooooo pretty, and i love your plate o' carrot cake and the pb cup. jealousface! hooray for fellow vegans within your family - and the eggplant parmesan looks ridiculously awesome! i have an eggplant in my fridge from the farmer's market this weekend. i just might have to make something similar this week. yum! this weekend i hit up the farmer's market, got a therapeutic massage, took my saturday morning yoga class (it's my fav!), and dan and i had a date night complete with pizza from pizza fusion (we just love their g-f crust)! :) enjoy your day, Lauren!

Hey, Lauren!

I just stopped by to see how you're doing and I can't believe it's only a month until you're due! My advice is to go see lots of movies and go out to eat a lot in the next month. I'm sure you've already had that advice, though!

I did do something exciting this weekend. I bought a VitaMix! You're a big smoothie person, right? Do you use a VitaMix? So far I'm loving it!

What's your opinion on Daiya vs. Teese? I've been using Daiya recently, but I think it has a really strong taste that will overpower other flavors. I had some pizza at Whole Foods this past weekend and I think they used a different vegan cheese and it was MUCH tastier, but I didn't stop to ask what kind it was. I just thought I'd ask your opinion on Daiya since you noted that you liked your eggplant parm better without it.

I'm going to try to update more often, but I really failed at that when I tried to get started again this past May. Babies=busy! ;-)

I love my Vitamix! I got one last Xmas, best gift ever!!!!

I'm not a big fake cheese person, so i haven't tried any besides Daiya, and I only tried that because my bestie loves the stuff! :) I never liked cheese to begin with so I find I like stuff better without it (the way I am use to it). Plus, sometimes Daiya makes my stomach hurt, not sure why! :)

I hope you "see" you again soon! :)

I wish I could say that I never liked cheese! I'm with you, though, that I tend to like food better without a vegan cheese substitute.

Also, a good friend of mine was recently diagnosed with Crohn's. She's having a hard time eating anything and has lost so much weight. Her attitude, though, is incredibly good! If you had to recommend one book/web site that could help her learn more about Crohn's, what would it be?

I am so sorry about your friend...hmm.. I don't like many of the crohn's site/books because they are so against eating right (they think meat & potatoes are the way to go). I read Paul Nisons book and one by David Klein when I was diagnosed, they are more geared towards becoming raw to heal. MyCrazySexyLife.com is a great place that is for people with all sorts of ailments and for those just into healthy living. I find a lot of support over there, even though they aren't experts. It's always nice to talk with others who understand. Lots of auto-immune people over there too! Let me know if there is anything I can do!!!

I can't believe you are only a month away, so exciting! Glad to see so many yummy things on your plate this weekend, especially that tempeh sandwich. I'm already dreaming up ways to recreate that.

That rose is beautiful!!! And that sandwich sounds great. Weekend Michelle and I were very productive in cleaning, organizing, etc. Not much fun but really needed to be done!!!

Sorry for your sister-in-law's loss. I'll say a quick prayer for her and the rest of the family. I must also say, that sandwich looks so amazing. I had a great portable and fried banana pepper sandwich the other day here in Austin that was to die for!

That eggplant dish looks great, too, and I really need to try those peanut butter cups! I've seen them on blogs so many times but never made them!

Absolutely LOVE the cinnamon snail. Their blue corn pancakes are the most delicious thing I've ever eaten. Everything I've had from there has been amazing, and I can't wait to go back when I am back on the east coast.
