The Raw, The Cooked and an Herb Update

Happy Friday! What is everyone up to this weekend? On Saturday night I have a date with my bestie to see Sex and The City 2! I can't believe we waited a week, we REALLY didn't want to deal with the crowds (not that it won't be crowded this weekend). Also, Our farmer's market is FINALLY opening on Sunday so I hope to check that out!

Anyway, one of my favorite things to enjoy right now is fresh pressed orange juice! I now have a reburbished Breville Citrus Press (more on that in another post) and I have been making fresh OJ at least once a day!
For lunch earlier this week, I felt like changing it up (since I was having a big kale salad for dinner). I spread avocado on 2 slices of sprouted grain bread and 2 raw crackers. I sprinkled a little Himalayan sea salt, ground pepper and nutritional yeast on top! YUM!
Another drink I've been enjoying (thanks to my Breville) is stevia lemonade! This time I added some mint from my herb garden! So refreshing!
More kale from my garden, this time I topped it with left over brussel sprouts and quinoa and cherry tomatoes and hemp seeds.
On Wednesday night I made the most delicious meal! :) I sauteed lots of garlic in olive oil and added in some cut up asparagus, let it cook a little, then added some cherry tomatoes and white beans. I sprinkled with some Himalayan sea salt and pepper, let it cook down a little then added a couple of black olives, cannellini beans, a tablespoon of soy-free miso and fresh basil. I let it marinate for a little then poured it on top of gluten-free pasta! Oh yum! This was delicious!!!! I plan on making it again next week with extra beans instead of pasta (since I couldn't finish all the pasta).
Finally, I wanted to give you all a little update on our herbs.. here is the stevia I planted..
Mint and Lemon Balm..
Basil..
And cilantro..

Yumm I eat that exact thing for breakfast almost every day.. sprouted bread with avocado, sea salt & nutritional yeast! It's so good!

oh!!! i wish you had posted this recipe yesterday morning...i bought some beautiful asparagus on wednesday and i made a nice pasta sauce with asparagus instead...i will definitely be buying more asparagus at the farmers' market next wednesday and making that nice yummy dish!!! it sounds amazing!

i love your herbs...they are just so beautiful and vibrant...

and the rest of your eats, amazing...

this weekend i hope to also go to another farmers' market and just relaxing with my boys...

Hey Kelli,

Believe it or not, Home Depot has the stevia plant! :) I've gotten one there for the past 3 years! This year I plan on dehydrating it and saving it for the winter to use in recipes and tea! XO

That asparagus stir-fry sounds delicious. I remember a similar recipe from an old issue of Vegetarian times that called for broccolini instead of asparagus. Might be a nice variation!

Your herbs looks great. Mine are doing ok, though my rosemary is doing great! Love anything with avocados so your lunch looks AWESOME!

i can't wait to hear more about the citrus press, Lauren - i hope you're out having fun watching sex in the city 2. some of my girl friends and i saw it just this past thursday. it was a bit long and a little silly, but it was still a fun movie and i laughed a bunch. :) hooray for homegrown kale salads - i see those tasty brussels on there. avocado smeared on sprouted grain bread sounds gloriously good, especially with himalayan sea salt 'n pepper, what a tasty touch! your pasta dish looks DIVINE - i love that you used a little miso in it - and any dish with asparagus is just that much more awesome! enjoy the farmer's market tomorrow, my friend!

I eat millet toast, sliced avocado, himalayan sea salt and hempseeds almost every morning! Any variation of avo toast/raw cracker, is so good. I need to add nutritional yeast! How yummy. Hope you are feeling/doing well, my dear!

Such gorgeous plants! I think you've inspired me to try again this year (my basil was a disaster last year!). Love avocado spread on just about anything!
