Happy Wednesday All! I hope you are having a great week, so far. I sure am! :) Although, the weather is a little too hot for this pregnant lady! Today we even have an air quality warning! Eek! I will be staying in the A.C. with Ginger! We are anti heat!
Onto food, here are some highlights... Cantaloupe! So sweet, so delicious! I wish I had another one to suck down!
I used the left over broccoli rabe my Mother in Law made and put it on top of gluten free pasta.. yum! Heavy on the greens, light on the pasta!
I also have been nibbling on this bad boy! Of course, the health food store didn't have the caramel bar again! So this time I grabbed a Maca Bar. I love Righteously Raw bars, they are my favorite raw chocolate!
For lunch one day I made a big kale salad (I pretty much have this 5 days a week for lunch). This time I added avocado, raw sauerkraut, raw crackers and nutritional yeast!
And finally, a garden update! Holy moly, look at this thing grow!
The weather has been so hot and we get a good rain every few nights, so our garden has flourished faster then last year at this time.
Since we already harvested our kale, we replaced it with watermelon and cantaloupe. Just for fun! I hope we actually get a few!!!! I will be in craving heaven!
Here are our cucumbers.. we have a ton already!
See.. YUM!!! We are going to make raw pickles next week! If you have a good recipe please post them! We made them last year but T was afraid to make them raw. He was worried about contamination or something. This year we are doing it my way! :) Don't mess with a pregnant lady when it comes to pickles! He he!
Two zucchini from the garden! Wow-e! I can't wait to juice these! Have you ever juiced zucchini? It's like cucumber but fluffy! I love it!

OH MY! That kale salad looks INCREDIBLE! I haven't had kale in years because we don't get it here, but oh how I wish they did because I want this salad desperately. Perfect summer food!

See, these kale salads are showing up everywhere. i don't know if i can do them- the kale leaves are quite harsh aren't they, compared to the bog-standard salad leaves...

Hey Sarah! The key to making a kale salad is massaging the oil, lemon and seasonings into the salad until it becomes softer. You can marinate it for a little if you want as well. I find if I massage for a good 3 minutes, it's perfect! :)

if you don't want to worry about bacteria and fermenting, you can always just slice up pickles and put them in vinegar or leftover pickle juice in the fridge for a few days to a few weeks. they soak up the flavor but don't ferment. still good!

i know i always say this, but you make the most delicious kale salads and they always start a craving with me. mmmmmmm! your pasta bowl with broccoli rabe looks ever-so delicious, and sadface on the lack 'o raw caramel bars. i have had that raw caramel bar before, it was some of the best chocolate i've tasted. i need to try the maca one, too. yummm-o! i saw in your last post you were experiencing some nausea again - i hope it passes soon, my friend! stay cool & happyfaced. yay!

do you have ani phyo's newest book? she has a GREAT raw pickle recipe that is super super simple and soooo good! I am pregnant myself (due in sept) and am a big fan of bubbies pickle but i made some of ani's pickles and they where delish!! i haven't posted a blog about them yet, i've been meaning to.

Raw pickles are safe because of the vinegar ... it's so acidic nothing will grow in it. You can also pickle zucchini and other things. We just do or pickles with vinegar, onions, garlic, and some kind of sweetener, that's all they seem to need.
Make sure you try the Mint flavor of the cashew creamery...actually..lol, all of their flavors are amazing. Westerly has them all. What a splurge worth making! Hope the NJ weather gets better soon!! I LOVE blueberry picking. We used to go to a place near six flags in nj for organic blueberries. They were the creamiest, sweetest, most delicious blueberries ever. You can totally taste the difference in comparison to the store bought version.
