Weekend Round-up

Happy Monday! I had a nice peaceful weekend, filled with relaxing and fun. But before that, I made Gena's: Fennel, Cabbage and Carrot Slaw with Poppyseed Dressing. Only I didn't have fennel or carrots, so I used purple cabbage and green cabbage and for the dressing I used cashews in place of pine nuts. Totally yummy! I love eating this slaw the next day too! Mmm! I had a Sunshine Burger with avocado and Bubbies Pickles and Sauerkraut on top!This was a green smoothie I made over the weekend: Cilantro, Pineapple, Mango, Vanilla Sunwarrior Protein, Bananas, Maca, vegan DHA oil, Chia and Flaxseeds.
I also made "Vegan, Gluten free, Daiya Eggplant Parm", I made it the same way you would make regular Eggplant Parmesan, but instead of dipping the eggplant in eggs, I dipped them in olive oil and gluten free vegan bread crumbs. In place of the cheese I used Daiya. This was a yummy comfort meal. I like to make this one in a blue moon, but usually with no cheese at all. Daiya has changed that!
Yesterday, T and I went to NYC for the day. We walked around little Italy (T wanted pizza) and then went over to Chelsea Market to walk around. They have a ton of cute little bakeshops, cafes and other stores in there. It's kind like a mini mall. Best of all, they have a One Lucky Duck (Pure Food & Wine's Takeaway place)!!! I got a falafel salad (my favorite). I've ordered this in the past, and mentioned how their falafel is better then any cooked falafel I've ever had! I'm a huge fan!
I also took a Mallomar to go! I was hoping for a Moonpie, but they didn't have any. Although, any dessert they make is out of this world, you really can not go wrong! By the way, have you seen the awesome contest going on by Heathy of Sweetly Raw! Make your own Moonpie! I wish I was as talented as these folks!
Mmm, so rich and creamy! Perfect end to a weekend! I hope you all had a great one! Any plans for the week? I have some little things going, nothing too exciting. But, yay for nice weather!! Have a great day! XO

hooray for such a nice weekend and some great weather, Lauren! i might have to check out One Lucky Duck with i'm up in NYC in a few weeks here. if i do i might have to try both the malomar & moon pie. mmmmmm! i never would have thought to put cilantro in a smoothie - i bet it was so delicious and gave it such a great flavor. so awesome on cheezy eggplant parmesan - it looks amazing! i'm digg'n Gena's slaw as well. totally gonna have to give it a try, and i like that you used cashews - i might have to follow your lead!

I love looking at your weekend eats! They always inspire me to eat more raw food (and occasionally make me feel guilty for drinking diet coke, which is besides me right now). Have to go to New York one day :)

Wondering, how do you like cilantro in your smoothies? I've tried it but really, it wasn't so good. What is the best combo with those greens?

And that eggplant parm looks professional (and not to mention YU-UM!)

ohmygoodness! I've been putting cilantro in my smoothies/food lately, its so refreshing. and just this morning I had one with pineapple and cilantro!

Where can I get one of those straws btw, I keep using plastic ones when I drink my juices in the morning.

I went to the Chelsea market last time I was in the city - had a grapefruit juice and chocolate bar.
Ive eyed the falafel salad every time Ive been to Lucky Duck... glad to know its the best you've ever had! Will def have to try it.

I made that Poppy Seed Dressing, too! It's soooo yummy.

I bought Daiya once, but it went moldy before I had a chance to use it more than one time! :( (Now I know I can keep the packages in the freezer.) So, I don't have a proper judgment on how much I like it. BUT, my Whole Foods just started selling Daiya, and I can't wait to try it again!!! Your eggplant looks great!

What a lovely weekend! I heart the falafel too, and haven't had it in a while. Will have to fix that. It was perfect weather for some wandering on Sunday :)
