Spring Break, with no Spring!

Hey Everyone! Happy Friday! Finally! I'm looking forward to the next week because I am on Spring Break! No work for me and I have plenty of fun stuff planned! Including a visit from my dear friend, Maria! Maria and I only met in the last year (online) and ironically she lives 2 towns over from my parents in NJ. So she is going to come up (I am only 40 min from her) and we are going to have some fun! Also, I am getting my hair done, a manicure and pedicure (my salon is eco friendly--score!), and a few other fun things. Mostly though, I can't wait to sleep a little extra everyday! ;)

For dinner earlier this week I made sweet potato and rutabaga fries baked in the oven. I had 2 rutabagas from my co-op box and I had no idea what I should do with them. I found this idea online and they came out pretty tasty! I also had a Sunshine burger on one slice of sprouted grain bread with mustard, tomato, avocado and of course Bubbie's raw pickles!T was working near his parents house this week and was kind enough to pick me up a raw meal from my favorite health food store. These are raw Flautas with a raw relish on the side. As you know, I love Mexican food, especially in the raw! These were awesome! So tasty!
He also brought me a mini raw cacao mint chip pie! I had half that night and the other half the next day. I am trying to stay away from cacao/chocolate, but this was so amazing!!! Mint and chocolate, I couldn't resist!
I loved that the ingredient list was so short and simple! Last night I had a dream about raw cheesecake! HA HA! Don't ask me why.. I've never even had one! I might have to make one this weekend! :)
What are your weekend plans? Anyone else off next week? Enjoy and have a lovely one all! XO!

P.S. If you haven't noticed on the sidebar, I signed up for Formspring! You can ask me anything! Well, maybe not ANYTHING! ;)

Rutabagas are funny ones, aren't they? I never tried to 'fry' them. I'm way jealous of the flautas, love that idea. Enjoy your time off!

Glad you and Maria get to meet up. Enjoy it!

Dreaming of raw cheesecake? Glad I'm not the only one. Lol maybe I was sending you subliminal messages.

I need to pick up some bubbie's today. Mmm.

No spring break here, I'm on err, sabbatical. actually it's worse for us because Chris has to prep for classes starting next week and it's crunch time for syllabus-writing.

I thought cacao was incredibly low in caffeine (nearly no existence in the bean)????? Just like teas, I *thought/think* the more processed the more caffeine? Does it have caffeine then? Not that I'm worried about it, I use it mostly as a treat, I just wondered.

Spring Break! Let's go to Daytona Beach! {do kids even go there anymore? what's the new hot spot for spring breakers?}

Sooooooo...does this mean you work in a school? I don't know why but I thought you were a "domestic engineer."

YES, make a cheesecake.

Hi, I really love your blog! Just wondering, why are you trying not to eat cacao? Is it bad for you? Or do you find it doesn't agree with you? Hope you have a great weekend!

Hi Lauren, I am avoiding cacao because I am trying to conceive. I don't want any extra stimulants in my body. Cacao makes me stay awake and I get hyper so I consider it a stimulant for me. Hope this helps! :)

Yummy food! I love the sweet potato fries and rutabaga (we call them swede here). And the mint cacao pie looks so yummy!

Rutabaga fries? Sounds intersting. I've never had a rutabaga before. I'm crazy about sweet potatoes, though! Yum! What a nice guy, picking you up all those raw goodies!
