Happy March Everyone! Lots of hopes on the horizon here. Mostly for more sunny days. ;)
Speaking of sun, or lack of, on Friday we had another snow day..like I mentioned, we had no food in the house. T ran to the local grocery store (the roads weren't bad at all, and he had cabin fever) and picked up some food for dinner. He said he felt like having coleslaw (probably in hopes for Summer), so I jumped on the chance to make Gena's: Fennel, Cabbage and Carrot Slaw with Poppyseed Dressing.
Talk about YUM! T and I loved this stuff! I am going to make it for every un-vegan BBQ I have to attend this Summer, and for our own (which we tend to have, with friends, almost weekly). On the side I had a kale salad and a sweet potato with coconut oil on top!
On Saturday, we finally got to Whole Foods. For lunch I grabbed some sliced oranges..
And my new favorite snack: Mulberries!!! I am addicted!! These beauties are like candy! I swear, the next time we see a movie, I am bringing a bag of these babies! Mmm!
Saturday night I made a "milk shake" I call the..
Ginger is The New Pink Shake:
- 1 bag of frozen organic strawberries
- 2 frozen bananas
- 1 cup of almond milk
- 1 tablespoon of raw almond butter
- 1/2 packet of stevia or agave (sweeten to taste)
- 2 mint leaves
- A few drops of Vanilla Extract
- More mint to garnish
Blend all ingredients (except garnish) until smooth. Enjoy!
Reminds me of a strawberry milk shake, only better and way healthier!
On Sunday night I FINALLY broke out my ice cream maker and whipped up Mint Ice Cream from Sarma Melngalilis's book Living Raw Food. T wanted it to be chocolate-y so we added a little raw chocolate (I know, I am TRYING to stay away from the stuff, but like I said, IMPOSSIBLE!).
This was so creamy and delicious!! Just like soft-serve!!! We have some left over in the freezer, now it's like hard ice cream. Perfect either way. I am going to be making more ice cream from her book in the near future! :)

That smoothie is gorgeous! No fair to be taunting me with smoothies and ice cream while I'm gulping down herbal cleanse shakes. :P I wonder how the Garden of Life compares to Blessed Herbs. I take the GOL multi vitamin a couple times per week. Your ice cream in the martini glass looks just like Pure Food & Wine - fancy! :-)

Totally mouthwatering! I also made and loved Gena's coleslaw, and tried mulberries for the first time a couple of weeks ago. So good and caramelly! And that mint ice cream is probably the best ice cream known to humankind. Yum... glad you enjoyed it :)

I love dried mullberries too. like candy.
i am sad i can't digest cabbage unless cooked or fermented. perhaps i could make a lettuce version of it. looks so good.

Its been so long since I had a smoothie (green or fruity)seeing yours makes me want to go dig the strawberries out of the freezer and get to blending :-)
I have never had a mulberry I dont think I have ever even seen them for sale. I will have to keep an eye out
Chocolate mint is my favorite ice cream flavor. The strawberry shake looks really good too. I'm also craving summer time flavors.
I totally need to make some of those ice creams! First I should probably clear out my freezer though :P

I just got this amazing goji berry granola from my local market that has mulberries in them! They are SO good.
Also, are you like me where I crave summer fruit and smoothies in the winter? Because I've been eating lots of oranges these days. It just feels so right!
Ginger Is The New Pink Shake! I love it. Gonna have to give this one a whirl and sip it while looking at the Ginger photo that hangs on my fridge.

i'm all about that deeeeelicious minty ice cream, Lauren. mmmmmmm! i need to eventually purchase an ice cream maker for dan and i. :) that's too funny that T had a craving for coleslaw - we did this past weekend as well. coleslaw reminds me of summer too, and i'm ready for spring and summer to be here NOW! :D your ginger is the new pink shakes looks heavenly, too. delicious!

What a great idea to munch on Mulberries during a movie! I ordered them once but was not brave enough to try them. Next Natural Zing order I'm going to try them again!
