The weekend and things ahead..

I had a fabulous wonderful weekend. The movie "I love you, man" was hilarious! We had a great time.

This Friday coming up I have a colonoscopy (BLAH), wish me luck, I am praying things have improved. Then I am off all of next week. Whoohoo, fun times ahead!

On Friday it was so beautiful and warm here that I opened all of the windows and put Ginger's bed in the sun for her to enjoy it. Here she is laying down, soaking up the rays. She will be 3 years old on Sunday!! I can't believe how big she has gotten, I will do a special birthday post for her on Sunday.
We bought some cute garden statues for our yard. I named the bunny Filbert. The angel has no name, she just watches over us. :)
We also bought and planted four blueberry bushes!! I can't wait to be able to pick and eat my own fruit (probably not for 2 years!). I must be patient!

At Whole Foods this week, I picked up 2 different powders for my smoothies. Superfoods to the rescue!
On Saturday when T and I went to our favorite health food store and deli, I picked up these Just Peas. They have nothing added and nothing artificial, they are pretty tasty. I wanted to get the persimmon one as well, but they are almost $5.00 each, so I tried the peas first. Great little snack!
For dinner at the deli, I got the vegan falafel sandwich on a whole wheat wrap. This was very tasty and fulfilling. Someone had asked in my last blog post about how I tolerate wheat with Crohn's. It really doesn't bother me at all. I've been tested a few times for gluten intolerance and it always comes up negative. I do however, try to avoid wheat on my own. But I do indulge once in a while.
I also had a garden salad from there. I added some Parma to it when I got home. This salad was so fresh and colorful. My favorite kind of meal! :)
Have a wonderful Monday everyone! Hopefully I will post before my colonoscopy. We will be at my in laws Thursday night-Saturday night, so if you don't hear from me, that's why.

Blender Blues

I finally received my 80-10-10 book and I am so excited!! I am only on chapter 2, but I have already learned so much. So far it's really interesting. I've been eating lots of smoothies (even one for dinner last night). The only problem is, my blender is on it's way out!! It is so ghetto it's not even funny. When I make smoothies it takes 20 minutes to blend everything, it vibrates off of the counter, it sounds like someone is using a jack hammer, and the bottom piece keeps coming off and T has to glue it on almost once a week (it's an outside piece, no I am not ingesting glue..). Anyway, we aren't in the market for a new one, so I will just have to wait it out. Besides, I want my next one to be a Vitamix.. the Cadillac of all blenders..sigh..a girl can dream, right?

Anyway, here's an assortment of grapefruit I ate one day this week. Ruby red and white. Surprisingly the white was a lot sweeter (my grandma sent me those). The ruby's are from the co-op.
I also had some cooked food this week. We hadn't had pasta is a while so I had a craving. For some reason I can not stand raw tomato sauce. YUCK, way to strong for me. So I made whole wheat spaghetti with marinara. I added eggplant, zucchini, olives, and sun dried tomatoes to the sauce. It was really delicious and had some added nutrition.
I also made a zucchini salad one night. I peeled a zucchini and marinated it with olive oil, Bragg's, garlic powder, pepper, and lemon juice. Then when I was ready to eat it I added sprouts, sprouted beans, olives and some avocado. This was really delicious, my new favorite meal!
Have a wonderful weekend everyone. We will be staying home and working in our yard. We might also hit up our favorite health food store/deli for dinner Saturday and possibly go to the movies to see "I love you, man." Don't forget Earth Hour is Saturday night! :)

Spring Fever

There's not much food in this post. Mostly because I have been eating mostly fruit and salads. I also forgot my camera this weekend so I don't have any pictures from our adventures. I will be sure to remember next weekend! Here's a smoothie I made over the weekend: papaya, bananas, and strawberries. This was very creamy and soothing! I love papaya!
I got this adorable notebook at Barnes and Noble on Sunday. I love journals and writing down thoughts, goals, quotes, lists. I must have over 50 different notebooks (all filled). No very "green" of me! Shhh!
We also planted a cherry tree this weekend! It's so adorable! I can't wait to be able to pick my own fruit! It probably wont produce until next year. I will be waiting patiently!! At least we have figs from our fig tree!
I picked out a few plants for T to plant in the yard. This one is a Heather Bush. We didn't plant it yet, since we want to get a few more.
Also, we got a Lilac Bush. Today T picked up some other different plants and flowers. I will post about them when he brings them home. I just love how serene our yard is going to be. This is the first Spring/Summer in our home. It's very exciting!
Have a wonderful week! The sun is shining today, I think I will get out there and soak in some Vitamin D! :)

Happy Spring!!!

Yay! Today is the first day of SPRING!! Lots going on here this weekend. On Friday we are going to an elementary school play (ha ha) for my brother in laws girlfriend. She is a teacher and she choreographed it. Should be funny! Then Saturday we are going to my in laws (the usual) and Sunday we are going to a holistic health fair in the area! Can't wait to see what kind of things they have there!

Here's a juice I made earlier in the week: apples, celery, lime, romaine and ginger.
I made this salsa from Paulina's blog: Eating as Nature Intended. It turned out more orange then hers did, I think the carrots I used were to big. Also, I didn't have cilantro on hand, so I left it out. Oh well, it was really tasty anyway! I topped it with some fresh avocado.
Yesterday my co-op box came. Here's what I got: strawberries, apples, asparagus, broccoli, carrots, grapefruit, collards, sweet potatoes, avocados, bananas, bell peppers, Roma tomatoes, zucchini, and red leaf lettuce.

Yesterday for lunch I made a delicious cantaloupe smoothie. It's delicious just plain with ice, but I added 2 frozen bananas instead, for a little thickness. I can't wait to have the other cantaloupe half today in a smoothie!
I also had some of the strawberries from my co-op box yesterday. They were the sweetest, most delicious strawberries I have had in a while. WOW! Strawberries have always been one of my favorite fruits. These are phenomenal!
Enjoy your weekend everyone! I hope it's a positive happy one for everyone!

Yellow and Green

While I was at Whole Foods he other day, I saw they had Champagne Mangoes. I couldn't have been happier! Usually they are $1.50 each, but this week they were on sale for 2 for $1.50! Whoohoo! I thoroughly enjoyed both of them for lunch the other day (along side a green smoothie of course!).

For dinner on Monday night I made the Thai Salad from Matthew Kenney's Entertaining in the Raw. I added tomatoes and avocado to it just because I had them on hand and a used a whole orange pepper. This was delicious! Lots of different flavors going on! I loved it!A few weeks ago I asked my Grandma (who is in Florida for the winter, she stays at her condo), to send me some grapefruit. Yesterday, to my surprise, they arrived on my door step! I am so excited! I love grapefruit!!

Since I am 25% Irish (the rest is Italian), for St. Patrick's Day I had to make some green things. For lunch I made a delicious green smoothie: 3 bananas, mango, lettuce leaves, bee pollen and water. This was so creamy and rich! Don't mind my under watered Gardenia. I promise it's not dead!!

For dinner last night (again in honor of SP Day) I made a cabbage salad. I added sprouts, avocado, carrots, and lemon juice. It reminded me of something you would call "A Bunny Salad" I think the rabbits that live in my yard would of very much enjoyed it!

A new love affair: FRUIT!

I hope everyone had a fabulous weekend. The weather was suppose to be warm here, but it only got up to 50! Boooo! Oh well, this week it's suppose to be nice. I am expecting the book 80-10-10 in the mail soon. Someone on RawFu was kind enough to sell it to me for half the price! I am so excited. I have been using Fitday to try to get 80-10-10 on my own, but the book will definitely help!

Here's a smoothie I made on Friday: 2 apples, 2 bananas, coconut water, spinach and cinnamon. It reminded me of an applesauce. Yum!
We did our grocery shopping at Whole Foods this week. I was so excited and surprised when T told me that they had 3 new Kombuchas!! Of course I got one of each! Superfruits is yumberry, goji berry and camu camu; Botanic No 9 is billberry, honey suckle, red clover; and Botanic No 3 is lavender and elderberry.
For Saturday I made a fruit salad to take with me to my in laws house. It had apples, oranges, bananas, and dates in it. This was so delicious! I just LOVE fruit!
We've been working on our garden more and more everyday. On Saturday T picked up some organic mushroom compost to fill it in. Here it is, almost ready for some veggies!! T and I are both thrilled about having a garden. I will be posting more pictures as it progresses. Yay!
Have a happy Monday everyone! I've got lots to do today! :) Nothing like a jam packed first day of the week!

A Simple Kind of Diet..

Sorry I haven't updated, I have been eating a lot of simple foods lately- smoothies, juices, and salads. I didn't want to post the same things over and over again. I also had Rawcos this week, but since I've posted it numerous times, I thought I'd leave it out.

I am very interested in 80-10-10. It just seems simple and nature. Plus I feel like I've been eating to many nuts and other higher fat raw food. So clean and simple it is! Here's a smoothie I made. I got the recipe from
Earthmother. It's a grapefruit banana smoothie (I added spinach, hence the green!). This was very refreshing!
Earlier in the week I dehydrated falafel. I used this recipe and they turned out really good!! Tons of flavors going on here. I also made some raw hummus on the side, no beans, just zucchini, hemp seeds, olive oil, lemon juice and seasonings.
Another smoothie I made: pear, banana, coconut water, and bee pollen. This was very good. I've been having smoothies for breakfast and lunch! I feel a lot better then I was when I would have a Lara Bar along side of my lunch. I think the fat was weighing me down all afternoon.
Now for the cooked! Last night I made Curried Red Lentil and Swiss Chard Soup. The recipe is from Oprah magazine, I found it online and veganized it, I left out the yogurt for the topping as well. It was really amazing! Here's the recipe for those who want to see what I'm talking about! :)
For my menu for next week I am having a salad almost everyday for dinner. I will post when I do a variation. I will try to keep it exciting here so you all come back!

Fresh Air Rules!

Friday night I was still hungry after my kale salad dinner. So I made a "milk" shake. I used 2 bananas, coconut water, a little Teechino and cacao powder. Delicious!
Saturday we went down to my in laws, as usual. At the health food store I got my usual green juice and a package of Raw Falafel by Awesome Foods.
I am actually making raw falafel in the dehydrator today. These were pretty tasty, I can't wait to compare.
Yesterday we were having warmer weather so T and I went into the city for a nice long walk in Central Park (we walked for about an hour and half). Before that we got lunch at Candle Cafe. I know I said we were going to go to Caravan of Dreams, but it wasn't close to Central Park so we went here instead. We were not disappointed!
I had this green juice and the Living Sprout Salad. Lots of crunchy sprouts, veggies, sesame seeds, raisins, and avocado. This was really good. Both Candle Cafe and Candle 79 have amazing salads. T got the Cajun Seitan sandwich and said it was unbelievable. He is a big fan of both Candles! I think he appreciates it more now that he is a vegetarian.
Here's a picture of a wood gazebo in Central Park. There are a few of them throughout the park. I think they are so cool!
Here's another picture I took during our lovely walk. Even though it was cloudy yesterday, it was still beautiful and refreshing to get so much fresh air.
When we got home T wanted to order Thai food. Not being a fan of it (or Chinese) I decided to make a raw broccoli salad with sun dried tomatoes and olives. I put it over a small amount of brown rice.
I hope everyone had a terrific weekend! T and I started cleaning up our yard and getting our garden ready! I can't wait to eat my own food!!!

A Wonderful Surprise!

For the past week I have been checking my mail everyday in hope that something special had arrived.. Today it finally came!!! Here's the pretty package it came in, with a note: Please, share, read and enjoy! Hmm, what could it be?

Matthew Kenney sent me a copy of his new un-cook book!!!! About a week ago he asked my address so he could send a copy and the anticipation has been driving me crazy!!! No more waiting though, it arrived today! I can't wait to explore this book more and figure out what I am going to make first!

Yesterday for lunch I made a smoothie: cantaloupe, banana, coconut water, a few pieces of frozen mango, pro biotic powder, and bee pollen. This was so refreshing and delicious! I can't wait to have it again this morning! I know it's not "properly combined" because melons are suppose to be eaten solo. But the pro biotic powder helps with that! ;)

Also for lunch, a raw cabbage wrap: white button mushrooms, carrots, sun dried tomatoes and mustard. Love the crunch of a raw wrap!

Okay, I better get going, time to start the weekend!! Have a wonderful one everyone!

Juicin' it up!

It's finally going to get warmer here this weekend. On Sunday T and I are going into the city to Central Park for a nice long walk, then we are heading to Caravan of Dreams for lunch!! They have lots of raw vegan options, can't wait!

Here's a juice I made the other day with lunch: Romaine, Apple, Lemon, Ginger, Cucumber. I drank it in a wine glass, just to feel special! :)
I also made a big fruit salad: orange, apple, banana, goji berries, pistachios, bee pollen, and buckwheat groats. Heaven in a bowl!
I got my co-op box yesterday. Here's what I got: apples, white mushrooms, cabbage, lettuce, parsley, tomatoes, broccoli, carrots, celery, Swiss chard, fingerling potatoes, pears, bananas, ginger and a salad dressing (it's not vegan, T will enjoy though).
Here's the bag of greens. Ginger was investigating them. Ha ha!
Lastly, another juice. I made this one yesterday after I got my co-op goodies. This was: romaine, parsley, pear, lemon, ginger. I love how my whole kitchen smells like parsley after I juice it!
Have a wonderful positive weekend everyone!! Hopefully I will be back with some yummy meals after the weekend!
