Feeling Comfy!

I am feeling so happy and strong this week. I have been eating raw till dinner, doing a really tough workout and focusing on being centered. It's amazing how wonderful these 3 little things have made me feel! I hope this keeps up!

One of my favorite comfort foods is a big kale salad. Even when I am sick and can't eat them, I crave them. There is something so comfy about kale! To this one I added cherry tomatoes, olives, avocado and raw pickles. YES, pickles in my salad, NO I am not pregnant! :)One night, earlier in the week, for dinner I had a Masala Veggie Burger from Trader Joes topped with avocado, stone ground mustard, and a raw pickles. I used a big cabbage leaf to wrap it in. On the side are some butternut squash fries. I just baked them with some pepper, curry powder, and Himalayan sea salt in the oven for 45 min. They were delicious!
This green juice was so simple and delicate that I couldn't resist drinking it from a martini glass. I juiced romaine, pear and lemon. Decadent!
Another kale salad this time I added lemon juice, some Brad's raw chips and olives.
It has been pretty cold here lately. So for dinner last night I made a big veggie soup. The soup had carrots, celery, onion, garlic, bok choy and rice pasta in it. Perfect cozy warm meal for a cold bitter night.

Oh I love those masala burgers from TJ's, so good. I've never tried a kale salad before, not quite sure what I'm waiting for, they look amazing. I prob would skip the pickles though ;)

rawsome food! love kale salad. yesterday i had some chard salad--not quite the same but pretty good nonetheless.

Just found your blog! I used to love pickles (and will probably be the worst pregnant woman ever- craving crazy combinations... of pickles and chocolate).

Kale is delicious! I love it "sauteed" with a dash of cold-pressed evoo, garlic and veggie broth.
I just bought it to juice! yum!

Kale brings me back to my favorite lunch place in Vermont where they always had the most delicious, perfectly steamed kale in the buffet case. I really need to recreate it at home soon!

hooray for feeling strong and being so happy, Lauren - that rocks socks! your green juices always look yum, and you know i dig all the comforting soups you create. mmmmmmmmmm! i can't believe i've never had a raw kale salad before - i think you've just inspired me to give one a whirl. yay!
