The weather gets colder, my meals get warmer!

Good morning everyone! Happy Thursday!

I got my blood work back today and it says I am anemic (which is ALWAYS, due to Crohn's). Also it says I have high EOS.. anyone know what this means? According to Dr. Google, it means I could be allergic to something.. hmmm..

Anyway, earlier this week I had vegan Cream of Broccoli soup from Imagine. Most of their vegan soups have soy milk in them, but this one didn't, and it is very low calorie too! Perfect for a nice warming lunch!
One night I made a bunch of kale with some sun dried tomato risotto on the side. I love risotto, it is so creamy and comforting!
T surprised me yesterday with this beautiful Fall arrangement of flowers. This definitely brightened up my day (and house!). So sweet of him!


Last night for dinner I made a white bean soup. I blended some white beans with low sodium veggie broth and some garlic, onion, spices, daikon, celery and kale. Then added them to the pot with the same ingredients "un-blended" so there was still a little chunk to it. This came out really good! I added some smoked paprika to give it a smoky flavor, kind of like bacon (I was never a bacon eater, or a fan of the stuff, but the flavor goes great in this soup). You could even add tempeh bacon, if that's your thing! This definitely is one of my new favorite soups!

It's miraculous that the soup isn't spilling out of the sideways bowl ;) Hahahahaha.

That cream of broccoli soup looks and sounds so good and comforting. I've never made rosotto before, it sounds healthy and delicious, you've just inspired me to give it a try, YUM!

OH! T is so sweet, I wanted my husband to buy me some flowers sometimes, after 13 yrs of marriage, all the attention just goes straight to our son!

i love soup with just regular broth. the other day i made miso soup with no spinach or tofu - just regular old miso and hot water. sometimes simple can be so awesome.

ps - i'm craving some risotto now!

With the foods you are eating, I don't know how you can be anaemic.. they are so full of iron and other spectacular things....and they look absolutely scrumpcious!

I Love risotto! Risotto is great for a chilly night. For dinner, I will have a nice bowl of risotto with a glass of wine, yep that's it and a fire.

Is the anemia from malabsorption of nutrients due to the Crohn's?
I have never heard of high EOS..

Thanks everyone! As for the anemia, with crohn's you bleed sometimes when you go the bathroom, also bleeding inside my tummy from the inflammation. Gross, I know! :)

I'm in a soup mood over here too...had veggie-lentil today and I'm thinking I need to make your yummy-looking white bean soup next!

You are a lucky girl for getting flowers...they are GORGEOUS! As beautiful as the ones in your blog-header. Nice to have a splash of color in the house, I'll bet! I need to drop a few hints to my hubby, I think. The last time I got flowers, I bought them for myself!

i’m not too sure what high EOS is? the cream of broccoli soup looks so yummy – perfect for a warm ‘n tasty lunch, indeed! we haven’t had risotto in forever – i think we’ll have to make some – i love a good creamy & comforting dish. the flowers are so beautiful – T is too sweet! i’m in love with your white bean soup & will have to make something just like it – it looks too awesome not to! mmmmmmmm! i hope you, T, and Ms. Ginger have a gloriously fun weekend!

That soup sounds yummy! Bean soups are my favorite. I actually like the sideways picture, it's abstract art!
