What am I going to do with 15 pounds of apples?

Good morning everyone! I hope you all had an amazing weekend! :)

Yesterday we went apple/pumpkin picking with my brother in law and his fiance. We picked 5 different varieties and came home with a 15 pound bag (that was ours, they bought a little less)! We also tasted some along the way..shh!! These are two of my favorite pictures I took. The weather was pretty warm and very sunny. I would of liked it to have been about 10 degrees cooler, but I am not complaining!
Back tracking a little, on Saturday T and I went to Whole Foods for lunch. I had the Curried Apple Pumpkin Soup (which has honey in it and is only 70 calories a cup!). This soup had so much flavor! I can't wait to get it again next weekend!Saturday night T and I shared a butternut squash (which Ginger ate a large portion of, she LOVES any kind of squash) and some sauteed mustard greens with garlic and olive oil.
We stopped by Sweet Avenue Bake Shop earlier in the day since we were in the area. I couldn't resist the Pumpkin Spice Cupcake. T had an Apple Pie one (that I didn't even get to taste because he ate it so fast!). His was filled with organic apple pie filling!! Mine reminded me of a pumpkin muffin. So delicious! I actually like cupcakes that have more of a muffin base to them. It is so dangerous to have a vegan bakery in NJ!! Especially since it's not that far away!

Apples = apple pie, apple chutney, applesauce, apple cider, dried apple rings...

Apple butters, apple sauce, apple pie, apple chuney, fresh apple juice, drid apple chips, baked apples, apple cinnimon muffins, apple cakes so many options!

It's okay - I got 17 1/2 lbs of apples a few weeks ago, and between a 3 year old and myself, they're almost all gone, just by eating!

Funny about all of the apples, you can make apple sauce, apple tarts, apple cake, the list continues. ENJOY!

Sorry, I really must get my mind out of the gutter... but come on! XD

Ok, I'll grow up... But that soup looks amazing! Must try and make something like that. Never thought of the combination of pumpkin and apple. I'm kind of glad we don't have a vegan bakery here :P... I think I'd be the size of a walrus by now if we did (mind you, I'm sure it would be worth it...)

It is definitely time for hot apple cider, how about some fresh apple juice. Yum....the squash looks amazing...time for that too!

i made sugar free applebutter last year. then i canned it and gave it away for xmas. it's great for toast and baking! it was sooo yummy. there is a recipe on my blog.

What kind of apples did you pick? I recently saw all the farmers markets are starting to get honeycrips, my FAVORITE apple ever. Enjoy the plentiful produce! Make an apple pie or crisp! Mmmm.

I say cut those suckers up and dehydrate them, or else start throwing them in your green juice or smoothies!

What did you do to prepare the butternut squash? I have never made one before.

.... at first glance I didn't see the x-rated pumpkin but after another second or so I did. LOL!!!

Oh yum, I second and third....apple pie, apple butter, apple sauce, apple cider, dried apples, apple chutney, and may I add fresh apple juice and drinks. :-)
