Is it Friday yet??
Hey Everyone!Sorry I have been M.I.A. I didn't take any pictures over the weekend and Monday and Tuesday were pretty hectic days. Read my tweets if you want to know what I am talking about. I don't want to talk about it anymore, since it totally stressed me out. Anyway, I am feeling good, and I plan on staying that way! In fact, Saturday morning I am going for blood work, I hope all my levels are normal. That would be amazing!Earlier this week, I made a delicious soup. I had received a ton of Swiss Chard in my co-op box so I added that along with carrots, garlic, onion and white beans to some low sodium vegetable broth and voila! A delicious, healthy, warming soup!
Last night I made some risotto with mushrooms and spinach along side some broccolini with garlic and lemon juice. I am in love with broccolini! They are a cross between broccoli and asparagus, two great veggies in one.. so good!
This morning I made my normal gluten free oats with a new twist. I added raw cacao powder, a banana, agave, chia and flax seeds. This reminded me of Cocoa Crispies, or at least from what I can remember since I probably haven't had them in 10 years! :) So much healthier too. Who needs to feed there kids that junk when you can make them a breakfast like this on occasion?!
Have a nice Wednesday everyone! I will try to post again Friday, as long as I have something to post! :)

OMG I loved cocoa krispies as a kid. I mean I could eat a half a box at a sitting type of thing. Your version looks way healhier and way more yum!
Really, your food is always so tasty and healthy looking! You are a fabulous inspiration, my dear.
What a healthy and delicious looking soup! And it's calling my name!!! You've always inspired me to put green veggies in my food and I love it, thank you for sharing.
Have a lovely day:)

i have been slacking as well. but i had to post a comment because i pretty much ate cocoa krispies non-stop throughout my childhood. man i miss them.
Seriously, I'm feeling much the same! Friday cannot come soon enough this week.
I've been feasting on soups too. Hits the spot as temps continue to drop.
everything tastes better with chocolate. i added some to my smoothie today too. :-)
Remember when Mom would buy Coco Crispies (very rare occasion, they had to be on sale- orrr when Dad did shopping).. And they would last a whole 10 minutes in the house because me, you, and Anthony would eat massive bowls of them. I think I might have to make that tomorrow morning :) Thanks sis! If I do not make it up Sunday, please send Mom back with Figs for me! <3
Good to hear you're feeling positive about your results!
