Good News!

Good Morning Everyone!

An update on my doctor visit..
He said that I have proved him wrong!! He very much doubted that the LDN would help me along with acupuncture and diet. When he saw and heard how well I have been doing, he said I shocked him! I have to go back in a couple months for a colonoscopy just to make sure all is well! Yay!

I want to give a shout out to my younger sister, Amanda, who now reads (and comments) on my blog. I am trying to talk her into starting her own blog. She goes back and forth with being a vegan, but always makes healthy meals! She is a teacher so she doesn't think she has the time for a blog. Plus, she has an adorable Maltese that Ginger just loves to hump! Ha ha! Also, I shared my blog with a few other friends Lauren and Meghan! I think it's so funny that I never share my blog with people I know, only strangers. How about you, do your family and friends read your blog??

Anyway, I received the most beautiful, fragrant, tasty, concord grapes in my co-op box. My whole fridge smells like grape juice from these bad boys. I had some with my lunch the other day. Aren't they gorgeous?
On Monday night for dinner I made brown rice with adzuki beans and kale. I got the idea for this from Alicia Silverstone's book The Kind Diet. She mentioned eating vegan macrobiotic and one of the staples she eats is a grain with adzuki beans and a green.
I also made Alicia's Clean, Mean Burritos. I used a gluten free brown rice tortillas, black beans, brown rice, avocado, onions and sprouts. I left out the Tofu cream, since I don't eat much soy, but they turned out really well. Very filling!! T had me boxing on his heavy bag in the basement after consuming these, not a good idea..Ha ha!

Congrats on the doctor visit! Maybe he'll use you as inspiration for his other patients to focus on diet & other aspects before going straight to medication. Those burritos look yummy!

Congrats on the good news from the doctor, I'm so happy for you:)

Only my cousin, Kim from The Vegan Mouse and my sister in Seattle read my blog regularly. My son sneaks in to give me comments once in a while when he hears me complaining that none of my family cares about my blog, lol!!!

p.s. I'm still working on lunch ideas for you. Will you check comments from the old posts? Oh, how about my lentil salad = vegan, gluten-free & soy-free!!!

Yay! I am so happy for you. Keep on staying healthy. I think you are doing a good job!! Quick question.. do you "occasionally" eat gluten? Like as a dessert? I have been gluten free for almost 3 months now and I am scared to even have a little... = / Or I guess I should say WHEAT FREE.

Yes, I do eat it on occasion, but I usually feel a little bad afterwards!

Congrats on the doctors visit!!!! I have told my family about my blog and they read it. Though, I have only shared it with a few close friends though not sure if the read it. It is sometimes weird sharing with close ones, I just love meeting new people and making more friends - the whole stranger thing. HAHA

That's really funny, I am totally the same way. My blog is just not something I care to share with people I know - I mean my mom and best friend read it, but I get a little shy otherwise. Maybe because writing is just so personal?

Hi GG,

I did respond, for some reason it is not here!

Anyway, LDN is Low Dose Naltrexone, it is a medication that has less side effects and risks then asprin. You can type it in on google to read more, it is being used for a lot of autimmune diseases and even cancer!

wahooooooooooooooooooo, Lauren! that is so awesome! i am sending you the biggest hugs right now – and high fives! wahooooooo! as for my blog, i think that i have a friend who reads it, but the rest of my family – i don’t think they do. makes me kinda sadfaced, but i understand that they’re busy people. those are some beautiful grapes, i love the adzuki beans (they’re one of my favorite beans – i like their texture a lot), and those burritos looks rock’n! wow!

That adzuki bean dish looks like the perfect Fall meal -- I just recently began using adzuki beans and we love 'em. Your burrito looks SCRUMPTIOUS...am putting it on the menu for the weekend. Thank you for the idea!
