Ginger Love and Weekend Eats

Happy Monday People!!

I hope you all had a wonderful weekend. T and I were pretty busy most of the weekend, but I Sunday we got to relax a little. T watched his team play football and I sat with him with a heating pad on my stomach because I was having terrible cramps! At one point I got up and look who took my spot..
She loves warm things, when I take blankets out of the dryer she follows me and lays on them as soon as I put them down! She has some personality! Anyway, T's team won! Now he thinks I am his good luck charm, since I never watch and the one time I did, they won! Ha Ha!

Saturday night I made Julia's Mock Pumpkin Curry. I added lots of curry powder, instead of cumin and some chickpeas as well. This was delicious! I am having left overs for lunch today!
Sunday I made Polenta Casserole from Alicia Silverstone's book: The Kind Diet. I didn't add seitan and instead used white beans and I also used more Fall veggies. Hers calls for asparagus, I used broccoli instead. This also has peas in it. We thought this was just okay. We felt it was a little bland. Probably needed some onions or something.
Here is my piece from the casserole. We liked how the top came out so crunchy, Alicia suggests adding Soyu to the top for that crispness, I added Bragg's instead. Sorry for the dark pictures, yesterday was rainy all day, so I had no natural light to use.
This morning I made myself some gluten free oats and added some left over pumpkin, raisins, pumpkin butter, flax, chia seeds and green powder. Yum! Pumpkin Pie Oats!!
Have a nice day everyone! I am going to be seeing my gastro today, can't wait to tell him how well I am doing! YAY!

Shorter does that to me allllllllll of the time! Especially with pillows! It's so funny that I can't get mad, and I let him keep it until he moves on.

Hi, This is a fantastic blog! The vegan diet can be incredibly healing and I honestly believe that you are on the right path to health. I have a friend who healed herself and her husband from many health problems by switching to a vegan diet.
Keep up the good work!

What a wonderful post! I LOVE Ms.Ginger and your weekend eats. I'm a BIG fan of pumpkins and I can't wait to make myself a big bowl of pumpkin pie oats, YUM! Pumpkin curry looks and sounds so delicious, that's my kind of food, thanks for the recipe, mmmmm!!!:)

I brought some of the Indian cauliflower stew you posted to work today... the teachers were amazed at how healthy I eat and of course asked me why... I told them about you and how you motivate me to eat well now to prevent future problems down the road :) Thanks for the recipe sis. I want to make that pumpkin curry next! John's going to start complaining about me stinking :)

my kitties love the heating pad too. i use it a lot now that it's cold. just for muscle soreness mostly.

Our pugs love warm things too. This morning it was cold in the house and our blind pug sat about 3 inches away from the radiator coils of our heater. He sat there for a couple hours and when we went to pet him his face was really really hot. We started calling him our "Toasted Marshmallow".

Ginger is looking like a little "stuffed cabbage" in that pic. Shhhh, don't tell her I said that. :D

Maya is just the opposite. Heat? Run, run fast! She is counting the days till the white stuff starts flying.

Hahaha whenever I have a heating pad on my bed, I always end up scrunched up in the corner with my cat stretched out on the nice warm heating pad. Pets, man!

cramps = sadface, but Ginger is just the cutest taking your warm spot. that cracks me up about her & the wram towels. ah ha ha!

the pumpkin curry looks so delicious! i'm sorry the bake was a bit bland - i bet onions totally would have helped! mmmmmmm! i love that you subbed in white beans, too - yum! i've been putting roasted pumpkin puree in my gluten-free oats in the mornings, too! it's been so delicious! i mix them up with a little agave, a few walnut pieces, some raisins, and shredded carrots. hooray for fall yummies!

Hi GG,

You can go back to my older posts, or google low dose naltrexone. It is a med I am taking now that has lower risks and side effects then asprin. I talked my doc into letting me take it because it's not yet approved for crohn's. But it is approved for helping cancer, MS and other auto immune diseases.
