I Pissed off a Bee!
Hi All!I am feeling great, better and better everyday! I have even been enjoying yoga and nice long walks again. Last night while walking Ginger I was stung (for the first time ever) by a bee (or wasp, not sure). Right through my pants, right on my heinie!! Do you believe that?? I made it 25 years without being stung and now I am just like everyone else! :) Mercury is in retrograde, so I am not surprised! Ginger has been taking up a lot of blog space lately. She is my healer and best friend, so she deserves it! :)
Earlier in the week I made some green beans that I received in my co-op box with some brown rice along side. This was a tasty meal, I added lots of garlic to the green beans! YUM!
Gluten free oats have been my breakfast of choice lately. This time I made them with some bee pollen, Hunza yellow raisins, cinnamon and pumpkin butter from Trader Joes. I love that stuff! I buy it just about every Fall, and I love adding it to different things. The ingredient list is short too (pumpkin, honey, lemon juice, spices and sugar). For the record, I do eat honey and bee pollen, although they aren't "technically" vegan. Maybe that's why that bee was so mad at me? ;)
My favorite lunch so far this week was left over Indian style lentils (lots of turmeric to get rid of inflammation) with brown rice and Swiss chard. I think I am going to make this again tonight for dinner only Italian style with garlic and olive oil! YUM!
Last night for dinner I made the Chickpea and Broccoli casserole from Vegan with a Vengeance. I have made this a few times in the past (T really likes it). I like adding some Bragg's on top at the end for a little kick, since it can be a little bland. Comfort meal? Check!

Ahh, swiss chard & lentils - so comforting. Hooray for warm dishes in the colder, fall weather! :)
Mercury in retrograde is always an ummm...interesting time, isn't it. I have my own share of chaos brewin during this time...but of course.

I've been bombarded by creatures, too! I had a mosquito IN MY HOUSE and I got bit in my sleep! EEEK. Glad to hear you are finally feeling better. That casserole looks so delicious. Yay for fall comfort food :)
So glad to hear you're feeling better and better BUT I'm so sorry that you were stung by that bad bee, hope the pain will go away very soon.

Ms. Ginger is adorable all up in her hello kitty blanket! awwwww! i am so glad you're feeling better & getting stronger each day! walks & yoga both sound wonderful, and so do all of your eats! garlic & green beans is one of my favorite combinations, and i'm gonna have to try out the casserole - it does look super comforting and absolutely perfect for fall. hooray!

My Bee Story: One time I started my car and realized a bee was inside. In my state of panic, I attempted to get out of my car....and away from the bee....without putting the car in Park. THen I got stuck in the seatbelt, so my car was Dragging me down the street! ALL because of a Bee! I got road rash up my entire lower body, and could barely walk for 2 weeks. How did it end you ask? My dad came running out when he heard my piercing screams and stopped my car. And the bee DID Sting me.
Possibly the funniest story of my life.
Hey Lauren! I finally made the casserole last week. My husband was not to thrilled with it (he is new to this vegan thing - I am doing it twice a week for him for our dinners to ease us both in), but he ate it. He did request that I do not feed it to him again, though. I thought it was o.k. Thanks for the recipe! Hope you are doing well this week.
