Falafel Bread? Oh my!

Hey All!

This week seems to be zipping by! Yay for Thursday!! T and I have a few plans for this weekend. Hopefully some apple picking, Netflix movies and walking around Hoboken. I just hope it doesn't rain, the weather has been so sticky here this week. So this post is soup free! :)

Earlier in the week I had left over black beans and brown rice from the tacos I made over the weekend. For lunch I added some sprouts and an avocado. YUM!
For dinner one night I made Meghan's Chickpea Falafel bread. Oh-my-gosh-so-good!! I love this stuff! What a great idea! I ate it like regular bread for this meal, with nothing added to it. I used kale in the recipe and brown rice flour instead of chickpea flour. Along side I made some garlicky kale.

For lunch the next day, I made a falafel bread sandwich. I added avocado, sprouts, lettuce and hummus. The bread actually held together well. Who needs regular bread when you can have something as flavorful as falafel bread (and it's gluten free)?

So I checked out Meghan's recipe, and I'm thinking I can do a raw-living variation on this bread. Looks and sounds fabulous!

Okay, all ingredients remain the same 'cept I sprout some lentils and use them in place of the cooked chickpeas. I dunno...maybe use some TJ's almond meal in place of the chickpea flour...we'll see. It's all about getting the right texture.

Process all together and into the dehydrator it goes.

I'll let you know how my experiment turns out...

it's been sticky here, too - makes me sadfaced. i thought it was supposed to be autumn?!? ah ha ha! i hope the rain holds off for ya! have fun in Hoboken, enjoy the netflix movies, and have the best time apple picking!
