More Comfort
I hope everyone had a terrific weekend! We had a more relaxing weekend then usual. We really didn't have much to do (for the first time ever). Saturday night still in the mood for comfort, we made vegan eggplant NO PARM. I've made this in the past, we don't use any imitation cheese, just eggplant, brown rice bread crumbs, olive oil, basil, seasonings, and sauce. I brush the eggplant with olive oil and then dip it in the brown rice bread crumbs and bake it before assembling. YUM! We even used eggplant from our garden!!
A typical Monday morning picture of Ginger. She comes downstairs with me in the morning and plops herself on the couch and I wrap her in blankets. Isn't she the cutest?
Last night for dinner I made another Buddha Bowl. This time I used wild brown rice and added peppers (from the garden), red onion, avocado, sprouts, sun dried tomatoes, fresh corn, parsley and raw kraut. Everything was raw besides the rice.
My blender is still on my last nerve, so for breakfast I made some of Gena's soft serve (Umm.. can I do a post without a variation of this?). :) This time I only used 1 and half bananas and about 1/2 cup of frozen blueberries. I also added E3Live and topped it with bee pollen and goji berries. The color was so pretty!

It all looks good! I’m thinking of making an eggplant – no parm – this weekend.
How long did it take you to get used to the E3 flavor? I have it in the powder and it tastes like burnt cat food. I saw a suggestion on CSL to get some empty capsules and just fill them with the powder. I might have to do that.

ginger is the cutest! my dog does that too. sometimes i can barely find her because she's all wrapped in blankies
I love Ginger's smunched face! Pugs are so sleepy in the mornings (and noons, evenings, and nights!).
All the food looks great. I have had a hard time with eggplant tasting bitter. Do you ever have that problem with it?

I always love your eats! i'm loving your eggplant parm - no parm... so I take it you don't salt the eggplant to get out the excess water/bitter juices???

Hey! :) A few people asked about the eggplant, so I will explain. For some reason, eggplant doesn't taste bitter to me (or anyone in mine and my husbands fam). We've never noticed the bitterness..strange!! So many people say it is bitter, maybe because we've eaten it so much in our lives that we are use to it? Kinda like broccoli rabe, I love it, other say its bitter! :) Oh well! Thanks for stopping by!
Everything looks so dang delish!!! Love the colors of the ice cream and I love the sauerkraut in the other dish. Whoo-hoo!
