Sorry for the lack of posts lately. I have not been 100% and the weather is so beautiful, I've been trying to spend as much time outside as possible. I can't wait until Fall, it is my favorite season!
I am going to see my doctor on Thursday to try to get on a better plan. I have a few things I want to discuss with him and I am going to fight for what I believe in. Which is not taking Humira (or any TNF blockers) anymore. I am so stressed out about taking a medication that has a cancer warning on it. I has saved my life in the past, but since it's not working now, I don't see any reason to continue taking it.
Anyway, earlier last week I attempted to make Vegan Pad Thai. I used a recipe I found online and some Pad Thai rice noodles I had picked up at Trader Joes. This wasn't anything great, the noodles were stuck together and the flavor just wasn't there. I don't think I will attempt to make it again.
After all of that work, I made some brown rice pasta with lots of parma, brown rice flour and broccoli--sorta like mac and cheese with trees! YUM!

I love the fall too!! I can't wait, especially since I'm in Florida and right now the heat is brutal.
Can't go wrong with simple-yet-satisfying meals!! Especially when they contain garlic - yum!!

OMG this is too surreal that you just wrote the word Humira on a blog post and I just discovered your blog about 2 hrs ago. I have rheumatoid arthritis (I'm 33 and a yoga teacher and runner and highly active) but sigh...I still have RA. Anyway, over the past 5 yrs I have been on and off Humira. I am still nursing my daughter and so I really don't like to take black box drugs either, esp. when what goes in me goes to her. But the pain of the disease. I know you must go thru this with your Chrohn's. Please be well and do what's right for your body. I don't know your whole story as I just discovered your blog but I'm gonna read up...

With the Pad Thai try cooking the noodles in smaller portions like single size and make sure the Wok is really hot. I don't have my pad Thai perfected yet but these are a few tips gleaned from the web/
Sorry about your pad thai. I hate when things aren't the way you wanted them to be. I guess it's good in a way as it encourages us to try new things. Ginger is so sweet. She does look like she loves her new little buddy.
so sad that the pad thai wasn't so great... it looks amazing. maybe i'll keep studying your picture and try to tweak it up a bit.
My next door neighbor has a red door and it is sassy and bold! I love it! Sounds like the front of your house got a nice makeover, complete with awesome red door :)

Simple is the best! The pad thai does look good, too. What did you use to season it? Maybe an extra splash of soy sauce or nama shoyu would do the trick?
fall is my favorite season as well. i’m sorry that you’re not feeling 100%, Lauren – and i’m sorry that you’re super stressed over the medication you have to take. that stinks. i’m sorry that the pad thai recipe was disappointing. have you tried the one from yellow rose recipes? it’s so good! hooray for getting that good chi flowing! your brown rice pasta with parma & broccoli looks so good! mac & trees – that’s what dan calls it when we make something similar! ahahahahaaa! too cute on ms. Ginger with her new baby, and you’re so right in the simple meals being the best ones! mmmmmm!
