Mama Mia, Pasta, Pasta, Pasta!
Happy Friday Everyone!!! It's been a rainy yucky one here. Actually, it's been this way for a few days now. Due to the gray weather (and PMS, sorry TMI) I've been eating a lot of comfort food. My favorite comfort meals revolve around pasta. Growing up we ate past at least 2 times a week, and pasta will forever remind me of my awesome Naunee (who is an 80 year old hottie). Earlier this week I made some gluten free pasta with sun dried tomatoes, Swiss chard and canellini beans.
For lunch today I was in the mood for a smoothie, but my blender is so horrible now, it's not even worth getting myself stressed over just to make a smoothie. So instead I used the food processor and came up with this:Lauren's Raw Sherbet (A Spin-off of Gena's Raw Soft Serve)
2 Frozen Bananas
1/4 cup frozen mango
1/4 cup frozen pineapple
1/4 cup frozen papaya
1 tsp. coconut butter
1 tsp. shredded coconut (for garnish)
Add everything to food processor and let mix for 5 minutes or until it takes on a creamy texture. Stopping every so often to scrap down the sides. Put in ice cream bowl and sprinkle shredded coconut on top.
Tonight T and I went to Whole Foods for some groceries and we ate dinner at Osteria, a restaurant inside our Whole Foods. Going with my pasta theme this week, I had some gluten free pasta putanesca with vegan sausages. T enjoyed the sausages, since I am sure they had wheat in them. I did have a few bites and they were pretty tasty. I am not a fake meat fan at all, so this came as a shock to me.
As I was grabbing some coconut milk yogurts (they were on sale this week) I notice something new.. COCONUT MILK KEFIR!! I dropped the yogurts and grabbed the kefir. T drinks regular kefir everyday so he wanted to get his own bottle of this vegan gem. He got strawberry for himself and I got myself vanilla. I've already enjoyed a glass, YUM!! Although not raw, I do like to have coconut milk fermented products once in a while, since they are good for my stomach.

you are not allowed to post any more sherbet recipes until i stop juicing. just kidding, post away. i will be back to the good stuff soon enough!
if you want a gluten-free fake sausage type thing there are some chorizo products out there that are quite good.

That pasta with the chard and cannelini beans looks so delicious! I saw the coconut kefir at my Whole Foods this week too, but I didn't grab any (and am regretting it now!). We did try the coconut milk yogurt though, my kids have never had a yogurt and they LOVED it! (and so did their mama :)

we totally connect on the pasta, my italian girly! such fond memories and i love changing them up now that i'm the one making the recipes! i love the idea of adding chard - haven't tried that one yet,but you better believe i'm going to!

Fermented coconut kefir IS absolutely raw — well, I don't know about the stuff in the bottle there...probably pasteurized.

The only brown rice pasta I like it from Trader Joes, it comes in a bag..it's pretty good! :)

Yes, I know the homemade kefir is raw, but the kind I bought is pasteurized. I saw the Gianni's making it, but I am always afraid I am not going to do it right and I will end up getting sick! :(

i hope the rain cleared up and that you and T had a happy & sunny weekend, Lauren! i've never had kefir before - totally gonna have to try that if i see it at the store. mmmmmmmmmmmm! your sherbet sounds so good and it looks awesome! what a tasty summer treat! lots of pasta = good with me! we love the brown rice pasta, too - it's my absolute favorite, and yours looks great with the chard 'n sun-dried tomatoes! wow!

Yummy pasta. I have yet to try any kefir, vegan or otherwise, but I have seen it on quite a few blogs now and my interest is piqued.
They're doing kefir too?! I'll have to check that out.
