Hello May!
Happy May! I can't believe how quickly this year is going by! I've been feeling a lot better. Eating my normal diet with no problems, and enjoying lots of green juice! The other night while I was walking into my kitchen I noticed this bunny staring at me through the window. T and I couldn't get over how funny it was just sitting there staring. So cute. Sorry for the blurry pic, I took it through the screen.
One night this week I had a huge pasta craving. I decided to make some gluten free pasta with broccoli rabe and roasted garlic. I could eat broccoli rabe everyday for the rest of my life, I just love it!
Another green juice: romaine, orange, lemon. My version of orange juice! Much better then the package pasteurized stuff from the store. All enzymes in tact!
This was another spin on the salad I had the other day for lunch. This time I used sprouts, avocado, broccoli, carrots, olives, ground pepper and Parma. So creamy and delicious! Perfect along side my juice!
Last night I made Black bean soup. This was my first time making it, and it came out pretty good. I used my own recipe which was potatoes, black beans, carrots, onion, taco seasoning and spices. I added scallions and avocado as a garnish! I also blended half of it to make it creamy. Mmm, comfort in a bowl!
Have a wonderful weekend everyone! Hopefully May with bring us all lots of health, happiness and sunshine to warm your soul!
P.S. I just wanted to mention Gena from Choosing Raw (one of my favorite new blogs) is having a giveaway for a new Spirooli spiralizer! Check out her blog and sign up for the giveaway!

Thanks, honey! It's actually a Spirooli model (my old tried and true was a Joyce Chen) but it doesn't matter! They're all awesome tools!
That bunny photo is amazing: could be an illustration in a children's book!
i always love your sprout salads... they make me so hungry. like a good little vegan bunny. :)
Cute bunny!!
Everything looks yummy Lauren. Do you grow your own sprouts of buy them at the store? Also, is that soup a cooked or raw soup? It sounds really yummy but I usually can't do raw soups--- something about the coldness of them weirds me out.
Happy May!
Hey! I do not grow my own sprouts, though I should to save money! The soup is cooked, I am the same way, can't stomach raw soup. :)
Thanks for stopping by!
What a nice surprise to see a bunny sitting there staring at you.
Love your salads! Glad to hear you are feeling much better.
I've never made my own black bean soup before, but it's one of my favorites!
how much green juice do you have a day? just curious.
i can't wait to get my juicer so i can start making some enzyme rich juice, too! mmmmmm! and i'm totally gonna check out Gena's blog - thanks for the link, Lauren!
