Beam Green and Food Porn!

Good morning! It's going to be a beautiful sunny day here and I've got a lot planned so I am going to make this post rather quick!

Last night I attended a "Beam Green" meeting in NY along with
Gena, Heather, and Melissa. Very cool to meet them, even though I was a little "off" because yesterday I had my Humira shot and I also lowered my Prednisone. Next time I will not do both on the same day..talk about fuzzy! The event was very interesting and I definitely enjoyed listening to Natalia Rose and Dr. Ginger speak. I recommend signing up for the pod casts if you aren't in the area, definitely worth the reasonable price, you can still ask questions for the speakers and interact as well. I will either attend another one or listen to the podcast online. Depending on if I feel like making the trek to NY during rush hour traffic. :)

I wanted to show you all the package that I sent to EarthMother for my giveaway. She received some raw Koko Crispies, Trader Joes Turkish Figs, Raw Pizza Crackers, 2 Pure Bars, a Nature's Gift Raw Cookie, a Gopal's Nori Power Wrap, and a Boysenberry Fruit Leather bar. What a lucky gal!
Earlier in the week, I made a pureed white bean and broccoli soup. This was very comforting on a rainy night. Sometimes I just NEED soup!
I also planted a few more herbs. From left to right I have parsley, stevia, chocolate mint and my amazing growing basil. By the way, the chocolate mint, smells exactly like it's name!! YUM!
This is a salad I had for dinner one night: lettuce, sprouts, cucumber, tomato, sun dried tomato, avocado and nori.
I bought some frozen Durian at the Asian market and I made this smoothie the other morning: blueberries, raspberries, banana, durian, kale, bee pollen, Thai coconut water and meat, and pro biotics. I was full for hours!!
Another salad I made for lunch: Mesclun, raw kraut, sun dried tomatoes, sprouts, tomato, avocado.
On our actual anniversary T and I made some brown rice pasta with homemade marinara sauce. We also made breaded (gluten free bread crumbs) eggplant in the oven and through it on top. It came out really well!
T took me for a ride in his canoe (probably won't happen again..I was frightened the entire time) on our anniversary. It was really nice and romantic, but totally scary! Here's a picture I took during the ride.
A few notes:
*One of my Twitter friends has a cool new blog it's about climbing, RAW foods, vegetarianism and healthy living! Check it out: The Organic Climber.
*Like I said I am weaning from the Prednisone (YAY!!!), now I have a new goal, LOSING THE 15 POUND OF WEIGHT I PUT ON FROM IT! YUCK!
*I will probably be back later in the weekend or Monday. Have a nice holiday weekend everyone in the U.S.!

It was so awesome to finally meet in person last night, Lauren! I am so glad that you had as much fun as I did at the meeting. I really hope you join in!

Your anniversary post was so cute!! I think your hubby sent you Ani's uncookbook for a gift?! Maybe?

Has it been hard on your marriage being sick? It was been a challenge for me and my hubby... its hard because he so wants to help but there is nothing he can do. He's unbelievably supportive though, I am so thankful for him!

Also, do you make your own raw kraut and sprouts?

Hey Girls!

No I do not make my own kraut, I take the easy way out and buy it raw at Whole Foods. The brand is called Real Pickles. It's very good, and sooo addicting! :)

As for my disease with my hubby, it's the same as you. He wants to help so bad, but can't. Sometimes he gets mad if I let myself get to sick before seeking help. But he is always very supportive and loving. He even slept on the chair next to me in the hospital for a week! Poor thing!

As for the book, I think I found out who sent it. From what I understand Ani may have sent it, since the return address was her publisher.

Thanks Lauren!! My hubby has slept in a chair at the hospital for a week too! Gosh-- we need to get together, we would have a lot of fun chatting :)

Sorry to ask again but just wondering if you make your own sprouts? Or where/what brand you buy?

Sorry! I forgot about that question! I don't make my own sprouts. I buy them at Whole Foods in a plastic container. Not sure the brand name, but it's the kind they carry.

the care package looks awesome - she's fo 'sho gonna enjoy all the goodies! that's too cool on getting to meet up with some fellow bloggers - and i want to check out those podcasts, fo 'sho!

your salads look rock'n and the smoothie sounds excellent & super filling! mmmmmmm! i really love your pasta 'n breaded eggplant dish - sooooo yummers - and the soup, too! hooray!

just wanted to let you know that i've had a green juice every morning since sunday, Lauren - i just love my juicer & green juice so much! so far my favorite juice is one with: a small beet (and the beet greens), 1 small apple, 2 small carrots, a bunch of swiss chard, spinach, and a tiny bit of lemon! mmmmmmmm!

Those meals look fantastic. Have you ever considered an anti-inflammatory diet? Meaning avoiding the nightshade family of veggies (which would include tomatoes and eggplant)? Something to consider. And don't worry about the weight. Steroid weight will come down naturally with your healthy diet

Aren't white beans wonderful! They are so good in so many different recipes. The soup sounds delicious.

Hey Lovely!

I love canoe rides but I'm horrible with a paddle! Fortunately, I'm with my hubby usually who compensates for me. lol! When I do get scared is when there are other boats cruising by and we are going thru their wake. I don't like that.

The package to Earth Mother looks great! That should bring a smile to her face.

there is so much yummy vegan food in this post, you could break it down into, like, 10 posts! I am drooling over the food pics -- the sprouty salad looks amazing, and your soup looks so creamy, dreamy, and yummy :) I have never had durian but your smoothie is making me want some!
