VOTE FOR GINGER!!

I have been doing really well on high raw. Mostly all raw until dinner. But my dinner is usually over 50% raw. I am feeling great! I even bumped my workouts up from 60 minutes to 80 minutes a day (with 2 days off)! Anyway, I don't want to jinx it, so fingers crossed!

I entered Ginger in a contest from the Humane Society. To vote you have to donate a minimum of $5.00. The money is to raise funds for spaying and neutering. Here's the link to her page if you want to help out! :) Or you can enter your own pet and send out the email to your family and friends so they can donate.

The other day I made a few delicious collards wraps filled with hummus, cherry tomatoes, scallions, avocado and Parma! YUM! Here's a picture before I rolled it up..
And here they are all rolled and ready to get in my tummy! This is another new favorite of mine!
Last night before dinner, T and I went to Trader Joes for a few things. We were really excited when we saw a Sofrito White Bean Stew (and it wasn't in a can!). It came in a microwavable container, but since we don't own a microwave (THEY ARE THE DEVIL!), we made it on the stove instead. It came out really flavorful and creamy. There were only a few ingredients and nothing artificial.
On the side, a big salad with avocado, sun dried tomatoes, scallions, chives, cucumbers, and cherry tomatoes. Crunch..crunch..crunch..
Now for my favorite new breakfast.. From One Week Raw: LouLou's Raw Apple Porridge! I modified with what I had. I used one apple and half a banana instead of 2 apples. I garnished with the other half of banana, walnuts, cinnamon, and some raw golden raisins. OH MY GOODNESS!!! This was just like oatmeal.. or porridge! So nutritious, I stayed full for 5 hours! Definitely helped me get through my morning workout! Two thumbs up!!
Okay, I am off to workout again and watch American Idol with T. Anyone else watching this season? I have so many favorites already!

so i was reading all about the "week of raw food"... and im going to try it.. starting tomorrow.. i always feel so much better after i eat raw... so we will see how it goes.. it might be too hard for me but im gunna try my hardest!!!!!

Lauren, your food looks delicious! I am glad you enjoyed the 'apple porridge'......I never thought of adding other fruit to it, this morning I tried it with an apple, 1/2 banana (like you suggested) and a small pear.....it was delicious. This is why I LOVE sharing recipes.....inspires us all.

I just adore collards.. I almost bought some today, but decided against it because I have kale and baby spinach that I need to use first.. but next week I am definitely back on the collard bandwagon! Lovely link to that ebook!

I have some white beans on the stove as we speak. I'll be using them this week as a major protein source! (white bean,kale soup anyone?)

totally going to vote for Ginger! yay! nice job on staying high raw, Lauren - and for being able to exercise a lot more, too! that's all such awesome news!

your wraps look super delicious! nice score on the soup, and the salad looks wonderful! i'm really loving your tasty apple porridge. think i need to try something like this for breakfast! it sounds amazing & looks heavenly!
