On the High Raw Road..

This week I was having a bad craving for one of my favorite types of food, MEXICAN! I kept it high raw and made Ani Phyo's Rawcos. I added a chopped pepper, scallions, tomatoes and avocado and put them in cabbage leafs then folded them like a taco shell. Along side some wild brown rice with the left over raw veggies mixed in. Perfect!
I have been drinking green juice just about everyday now. I am totally hooked! This one is romaine, apple, lemon, cucumber. I used a whole head of romaine. I am trying to be as healthy as possible. I don't want any Crohn's problems, and I am also trying to prepare for pregnancy (which isn't probably for another year..so don't get to excited!). But I feel like the earlier I start preparing, the better!
For lunch one day this week I made a sandwich on sprouted grain bread. I used cucumbers, avocado, sprouts, sun dried tomatoes and some mustard. YUM! Best sandwich I've had in awhile.. actually, only sandwich I've had in a while..ha ha!
Here's a picture of it all ready to be eaten! I love the crisp the cucumber gives it! Who need mayo when you have avocado, nature's butter!
Last night for dinner I made a big kale salad with avocado and sprouts. I added some roasted potatoes to it for a little oomph! Turned out delicious. I just love kale salads!
I hope everyone is having a great week! Seems like it's flying by! Can't wait to spend time with my in laws and T on the weekend!

hooray for lots of healthy 'n tasty green juices, Lauren! i need to get a juicer so i can make some, too! your kale salads always look so pretty & i love the raw tacos! mmmmm! your sammie is most delicious looking. how right you are: who needs mayo when you've got creamy avocado! yay!

It's never too early to ready your body for pregnancy! How cool!

I just love love kale salads too.. and sprouts and everything here. Raw mexican food.. Cabbage leaves are so great to hold the fillings..

I'm really SOOOO EAGER bout your GREEN JUICES!!! I really need to make some now!!! I have a juicer but usually no time to make a juice hah...!! =(( HAVE TO CHANGE IT!!!

I'm another green juice junkie. If you had even suggested to me that I would WANT to, NEED to, drink at least 32 ounces a day, I'd have thought you were loony toons! Funny how our bodies know exactly what we need for optimum health (if we'd just listen to them). I think you are preparing a very healthy and fertile environment for your impending pregnancy.

Hey girl ~ I just have to say I ADORE your blog!! From one italian jersey girl to another - WELL DONE :)

Besides being so great to read (yes, I just read the whole thing!)~ your pics are making me hungry!! If you're ever in the Morristown area definitely stop in the Health Shoppe - juices & smoothies and a good amount of raw treats...I'm very fortunate, a 5 minute drive in any direction will get me to whole foods, trader joes and the health shoppe...living in jersey isn't so bad!!

~ love the life you lead....you're doing great....sending blessings of health and love your way...

Thanks so much Angelina! I will definitely look into that health food store. My parents and in laws live in Monmouth County, they have 3 health food stores within 10 min of each other! I live in Union County, they just built a big whole foods, but it's lacking in the raw department. No good health food stores around here either! We have a Trader Joes in town, that's about it though. Thanks for the great compliments, I am glad you enjoy my blog!!

Ohh thats too bad that there's nothing in your area - ahh are you talking about the new whole foods in springfield?? I've been once - its crazy big and you can get lost in there but I hadn't noticed they were lacking in raw foods - ran in with my dad (who's non raw) and I swear I felt like I was in a warehouse!!!! I keep saying I'm going to get back but I haven't being i have Madison WF's around the corner (not bad either, worth a stop over if you hit up the Health shoppe in Morristown). Now the health shoppe is great because they will even place orders for you...and they have stuff you probably won't be able to find in other stores like Love Force bread; raw snacks, crackers, etc...It shouldn't be too far from you right? 25 mins??

I'm trying to get a north jersey raw meetup group going. I've connected with someone who teaches raw prep classes, so hopefully we'll join forces and get something going by spring - if you're interested, definitely drop me an email - just barely in the planning stages now, but I think it would be great for this area. Yea, I've been to the Madison Whole Foods, that is a nice one. Yes, I am refering to the Springfield new Whole Foods. You are right, it's ridiculously large! :) That health food store you are talking about sounds like the one I go to on the weekends (near my family). They have some great raw goodies! It's called Dean's if you are ever in Monmouth County, there's one in Shrewsbury and Ocean Township.
