Gosh, everyone I know is turning veggie!!!

Yesterday T and I went to a local farm to check out some garden stuff. This will be our first Spring/Summer in our house so we are super excited to finally have a garden! We plan on it being all organic and natural, no chemicals for us! Anyway, I picked up some figs at the garden center-my favorite!
Then we went to Whole Foods where I made a huge salad! Mostly all raw except for hearts of palm, beans, and some curried cauliflower. So filling!
Last night was "Italian Night" for us. We made brown rice spaghetti with sun dried tomatoes and broccoli! This was to die for!! T is still talking about this today! Mmm!
I got a lovely surprise today, my coconut butter that I won from HiHoRosie and Yardsnacker arrived!!! So creamy and rich, I am going to add some to my smoothie in the morning, can't wait!
Today (and tomorrow) I am off. My sister came by to see my house for the first time and we hit up Trader Joes. She has never been there and is slowly transition into a vegetarian/vegan (she eats fish and chicken 2 times a week). Anyway, I made her get a bunch of vegan stuff so she can see how easy it is. She even got tempeh! I hope she likes it! I also let her borrow every vegan cookbook I own, she should have no problem with finding something to make!
P.S. T is still vegetarian, strong and proud!!!! :)

I can't wait to see your garden eats this summer! I wish so much I could have a garden.. Even in my old house, I couldn't because the backyard was covered in pine trees and total shade. I did do some container stuff though. Maybe I can still do that?

Brown Rice pasta is really growing on me..

love your salad.. I am craving a big fat salad. I finally went grocery shopping today and spent 24.80 mostly on veggies!

that's so cool on your sister transitioning! how nice of you to loan her your cookbooks - and you're right - vegan is easy - you've just gotta lead the way & show her how! that's so awesome! fantastical news on T still enjoying being a veggie! w00t!

Lauren, i swear - i need you to be my personal salad combination person! you always make the most tasty look'n salads! and your italian night yummies have me wishing i was there to enjoy it all! sooo fantastical!

I'm going to plant my first garden this spring too and I can hardly wait. Just dreaming about it has helped get me through this arctic winter. I've been inspired to follow the square foot garden guru, Mel Bartholomew.

Can you imagine walking out your back door and picking your own salad goodies? Yes!
