Resolutions, Birthdays, Snowmen, and FOOD!
It feels so good to start off another year feeling great and healthy again! I have one resolution, but it has many parts. I want to be the best "me" I can. This means physically, mentally, emotionally, spiritually, personally.. just ALL around better! When Christmas and New Years are over people tend to get bored, because they have nothing exciting to look forward to. But not us! T's birthday is January 25th and he is going to be 27! Whoo! Then a week later (February 1st.. yes we are BOTH Aquarians, the zodiacs hippies..so true) it's my 25th birthday!!! We are going to Candle 79 (my FAVORITE restaurant) in NYC for my birthday, and maybe going to a play.. can't wait! Now that T is a vegetarian (he did great on his first day) we will probably go somewhere that can accommodate us on his birthday too! By the way, my birthday falls on the stinking Superbowl this year. We are making it an early dinner, possibly brunch.. grrrrrr...Below is a lunch I made on Tuesday. I had a late doctors appointment and we were going to be having big salads at my in laws house for dinner, so I had my cooked meal for lunch instead. It's a Trader Joes Veggie Masala Burger on a sprouted grain bagel with mustard, sprouts, sun dried tomato, and spinach. YUM!
On New Years Eve we got a nice coating of snow at my in laws house. T, who loves to be a joker, made this tiny snow man with the snow. He used a rope at the scarf. He just need a tiny carrot and some eyes. Ha ha! By the way, the white bean soup we made, came out delicious. Here is the recipe if anyone wants to try it. We had a wonderful time. We played Questionary men vs. women and my mother in law and brother in laws girlfriend and I were a team while father in law, T, and his 2 brothers were a team. Of course the women won! :) We also watched Dark Knight and Eagle Eye. It was a great time!
Yesterday, T and I got up, worked out and left my in laws early. When we got home we did some stuff around the house (took down our tree and decorations). Then we picked up our co-op box (sorry no pic) and grocery shopped. Nothing to fun. We also stopped by Lowe's and I got this adorable welcome mat for the back door. Since Ginger uses the back door the most! ;)
Last night I didn't make anything traditional for New Years. Instead I made some broccoli rabe with garlic, olive oil and toasted pine nuts and put it over some Israeli cous-cous. T added tofu to his and we both really enjoyed it. I have been craving cooked greens lately. This really hit the spot!
Tonight we are going ice skating with my brother in law and his girlfriend. We invited my in laws and they might come as well! I think they are trying to be more adventurous for the New Year! He he!

the TJ's masala burger looks great! and so do all those cooked greens. mmmmmmmmmm! glad T had a successful & tasty day as a veggie, too! nice way to start off! hooray for feeling great & starting off the new year with some tasty eats!
