I
took lots of pictures this weekend so I decided to divide it into 2 posts. Hopefully tomorrow, I will get the Sunday post up. Anyway, I had a wonderful weekend. Friday was so much fun ice skating. My in laws ended up not coming, but my brother in law and his girlfriend came and we had a blast! None of us has been ice skating in years (T did take me once when we were dating)..Us girls were holding on to our men for dear life. But once we got the hang of it, we were cruising! Although, I did fall once!Before heading out to skate, I made dinner for T and I. Roasted butternut squash and brussel sprouts. Lots of garlic with the brussels! YUM! Sorry for the sideways picture, my camera must of loaded it that way.
I finally used the Young Coconut I got at the Asian market. Oh MY GOODNESS!!! So delicious! I didn't realize how creamy it would be. Much better than ice cream or any sweet! I need to go back and get a few more to have as desserts! I looked up the nutrition facts and from what I read they are only 140 calories! How can that be possible? I will take it though, less guilt! He he! Anyway, I made this wonderful smoothie Saturday morning: banana, young coconut meat and juice, frozen durian, chia seeds, bee pollen, goji berries, and flax seed. So rich and thick, definitely a great start to my day!
On Saturday when we got to T's parents house, T and I were starving! We decided to go to our favorite Italian deli and get wraps. This is one of my all time favorite sandwiches, broccoli rabe with roasted peppers on a whole wheat wrap. This time, I decided to ask for some eggplant and tomato sauce on it as well. It was really good! But next time, I will opt for my usual. This was to messy for me! :) Still delicious though!
This was on Saturday night, Ginger and SueShe sharing a bed. Ginger is like SueShe's little sister, she teases her, annoys her, bites her (Well, didn't your little sister ever bite you?), steals her toys. But in the end, they always end up loving each other. Sueshe always protects Ginger from the cat too. Even though, Ginger usually starts the fight!
Well, that was some of my weekend! More next time! :) I hope everyone else had a wonderful first weekend of 2009! By the way, T is doing wonderful as a vegetarian! This week will be the true test, since he is out of the house for lunch! Keep your fingers crossed!!!

your roasted veggies look so tasty! we've got a butternut squash that i keep forgetting about - i need to set it out so i can roast it up soon! yummy!

Hey there! Thanks for stopping by! Aren't young coconuts the best? I have some in the dehydrator right now. I marinated them in Nama Shoyu and they are "baking". When they are done they taste like bacon! The possibilities are endless. My daughter who is soooo picky (she's 3-1/2) loves to just eat it plain out of the shell.
